Detecting methods of conventional adulteration in raw milk was studied in this paper, and the methods aim to rapid detecting in field without laboratory conditions, need quickly, high accuracy, simple operation, low cost and easy to carry, in order to assure the acquisition process convenient, fast and accurate.Experiment 1: Data of a dairy company were collected and analyzed, and detecting methods were studied according to the main adulterations and their contents in raw milk, the adulteration reasons and antibiotics residues. The results showed that: salt, starch, alkali, nitrite, vegetable fat powder, hydrolyzed protein and and antibiotics are the main adulterations and residues in raw milk. The reasons of adulteration are for the purpose of achieving the acquisition criteria, preventing deterioration of raw milk and increasing income.Experiment 2: Antibiotics detecting kits were tested by use of two detecting kits (Delvotest rapid detection and Delvotest slow detection). The results showed that both two methods can detect the lower limit specified; the former spend less time(about 10 min), but has poor repetitiveness, complicated operation, and need well training for operating accuracy, if not it may cause reagent contamination; the latter method has good repetitiveness and simple operation, don't need training for operating and the reagent won't be polluted, but the time for detecting is 2.5-3 hours.Experiment 3: 12 adulterations in raw milk(mirabilite, salt, nitrite, formaldehyde, ammonium salt, alkali consumption, starch, sulfur, dextrin, hydrolyzed protein, boric acid, borax) was studied for their detecting methods, order of reagents added and additive amount, results'color change, lower limit of detection, some interference, methods'accuracy, sensitivity and reagent retention period. The results showed that: the detection methods are simple and quick, have good color generation, evident phenomenon and lower detection limit. They are also easy to judge and master the phenomenon of adulteration, have low-cost, short detection time and can carry out smoothly at room temperature. Therefore they can be made into kits, and can be used in the open air or other special places, in order to spread and exploitation in actual production.
