This paper compares the isotopic mass spectrometry, thin layer chromatography (TLC), rheological and infrared spectrography methods to test exogenous plant syrup in the honey,and compare the advantages and disadvantages, all this try to looking for a more accurate detection method to test exogenous plant syrup mixing. Firstly this experiment research 66 samples honey, honey proteinδ13Cvalue, including 56 honeys'δ13C less than-23.5‰, so they were pure honey. Three honeys'δ13C values greater than-21.5‰,They were doping honey.7 kind of honeys'δ13C value in-21.5‰--23.5‰grey area, detect this part by honey ISCIRA index, when ISCIRA index is-l‰,7% C4 sugar exist in the honey. Incorporating C3 plants syrup, because itsδ13C value is very close to honey, so the incorporating won't cause honey isotope value change greatly.Next,this paper established four kinds of honey and 2 kinds of syrup Bingham fluid model, and analyzes different syrup content of honey rehological influence. Map shows that with the increase of plant syrup content, honey viscosity declined, and both linear relations. Results show that the honey rheological properties res‰‰‰‰earch will provide honey plants in syrup of qualitative and quantitative research provides very valuable reference.Finally, this paper qualitative studies the the influence of infrared chromatography of adding two kinds of plants syrup in honey itself, the result shows that the honey mixed with different content high fruit corn syrup and rice syrup,the infrared spectrum in 1000cm-1100cm-1 and 1400cm-1, peak shape and peak strength changes and is related to incorporating high fruit corn syrup and rice syrup content.
