Puer tea is a historical famous tea in china, according to the processing and quality properties, it is comprised of Non-fermented Puer Tea, Puer Chen tea, and Puer fermented tea as one of the most important Puer in China currently. Course wetting caboodle under natural vaccination condition is used to produce the Puer fermented since 1970, which is the key process to produce Puer and has been becoming the most popular way for industrial application at present., this process are a series of chemical reaction to use the ingredient from sun Mao Cha Ching under the effect of exoenzyme excreted by microorganism and the heating and Tea moisture hyther from microorganism respiratory metabolism, such as oxadation, condensation, polymerization and decomposition, tea Polyphenols was converted mainly during the reaction. Profitable reaction product to Puer tea is received and finally get the Color red brown, Full-Bodied and Aroma Chen alcohol. Methoxyl compound is the physical base of the Pu'er Tea special Aroma, and improve its content will get more ecomonic benefit. This study is to select the Aspergillus (7-hydroxy benzene compounds) by Microbial pure training, then artificial infection and detection of methoxyl compound were done to aseptic Sun Mao Cha Ching. The test conclusion is shown as below.1.7 types of Aspergillus were trained though czapek's solution:Aspergillus foetidus, Aspergillus versicolor, Aspergillus oryzae, Aspergillus awamori, Aspergillus tubingensis, Aspergillus fumigatus and, Aspergillus niger. By detection of the volatile compound, Aspergillus foetidus, Aspergillus versicolor, Aspergillus oryzae and Aspergillus awamori were found to be able to produce 7-hydroxy benzene compounds2. The selecteted Aspergillus foetidus, Aspergillus versicolor, Aspergillus oryzae, Aspergillus awamori were vaccinated to aseptic Sun Mao Cha Ching respectively, then course wetting caboodle process was done for 25 days, the volatile compound to be produced was detected:most of Which are from Aspergillus foetidus for a total of 9 types around 23%, therein 1-dimethyl benzene oxygen radicals amount for 14.7%; 3 types of 7-hydroxy benzene compounds from Aspergillus niger around 5.82%; 2 types from Aspergillus oryzae; and 1 type for Aspergillus versicolor.3. These Aspergillus were mixed with 3 options and artificial infected to septic sun Mao Cha Ching respectively. the volatile compound to be produced was detected after course wetting caboodle process for 25 days. The result was that 1,2,3-3 armour oxygen radicals benzene was detected in Option1(Aspergillus niger and Aspergillus oryzae Mix); 1-dimethyl benzene oxygen radicals was detected in Option 2(Aspergillus niger and Aspergillus foetidus Mix); and Methoxyl compound was not found in Option 3(All 5 Aspergillus Mix).
