In this paper we extract proteins from adzuki bean by the methods of alkaline extraction and acid precipitation, research the influence of different conditions on protein extraction ration, including material-liquid ration, pH value, extraction temperature and extraction time. Furthermore, we process orthogonal test . Finally, the optimum conditions of protein exteaction were as follows: material-liquid ratio 1:25, pH value 9.0, extraction temperature 40℃, extraction time 60 min. Meanwhile, the characteristics of protein in the adzuki bean were studied, solubility, emulsification, water imbibition, oil-absorbing and so on.Zymolysis protein, which extracted by alkaline extraction and acid precipitation from the adzuki bean. According the clearance rate of hydroxy radical(·OH) of zymolysing production to select the optimal protease, and studied the process of adzuki bean peptide. Study the effects of enzyme addition, substrates dissolve degrees, pH value, enzymolysis temperature and enzymolysis time on antioxidation activity of eymolysing product. Determinate optimal conditions by Orthogonal Test, enzyme addition 27750U/g , substrates dissolve degrees 5%, pH value 9.0, enzymolysis temperature 45℃and enzymolysis time 4h.Separate the zymolysing products by the methods of Sephadex G-25 column chromatography ,study the ability of scavenging superoxide radical(·O2-)and hydroxy radical(·OH)of separating components and its inhibiting ability of the auto-oxidation product malonaldehyde (MDA) from homogenate of little mouse livers. Results show that: Adzuki bean polypeptide has certain antioxidant capacity.
