Based on high yield and short fermentative time of the process of mild flavonur chinese spirits,the large space above the ground level of cellar pool in the brewing workshop of strong flavonur chinese spirits,and strong capacity of pit mud that generates aroma component so on,the paper puts forward the solid double-style model of reflux liquor fermentation which has used the brewing process of the mild flavonur chinese spirits above the ground level of cellar pool by raising the height of pit cap,meanwhile, greatly integrated the wetting-grains of temperature that is higher than 90℃,dislodged fermentation and fermentation of reflux liquor by adjusting the traditional process of wine brewing.The solid double-style process of reflux liquor fermentation not only improved the yield of wine and high-quality wine of the whole cellar pool ,but also greatly utilized the space of workshop.(1) Based on high yield and short fermentation time of the process of mild flavonur chinese spirits and the large space above the ground level of cellar pool in the brewing workshop of strong flavonur chinese spirits,the solid double-style process of reflux liquor fermentation has improved the liquor output of whole pit using the brewing process of the mild flavonur chinese spirits above the ground level of cellar pool by raising the height of pit cap.(2) The solid double-style process parameters of reflux liquor fermentation has been optimized by means of doing the experiments.The optimized processing conditions of the solid fermentation process of double-style liquor is as follows: the wetting-grains of temperature is higher than 90℃; the height of pit cap is 1.5m;the time of the dislodged fermentation and fermentation of reflux liquor is 60 days when the double residue has been distilled the second mild flavonur chinese spirits. The liquor output of whole pit in the optimized processing conditions of the solid fermentation process of double-style liquor is more than 20% that in the traditional process of strong flavonur chinese spirits,and the ratio of quality liquor of whole pit in the optimized processing conditions of the solid fermentation process of double-style liquor is more than 3%that in the traditional process of strong flavonur chinese spirits.(3) By tracking and analyzing the factors in the solid double-style process of reflux liquor fermentation,we discover that the temperature is consistent with the laws that is"slow rise in prophase, maintained in middle period, slow down in later period". Yeast, bacteria and mould have something to do with the variation laws of physical and chemical factors as moisture, acidity, starch, reducing sugar, alcohol content and so on.(4) The blending wine produced by the solid double-style process of reflux liquor fermentation after storage is provided with the style that is pure and thickly aromatic,clean and coordinate,mellow and harmony,alcohol sweet and full,elegant in style,which is in line with the majority of consumer tastes.(5) The acidity in chinese spirits fermented by the solid fermentation process of double-style liquor is higher than that fermented by the traditional process of strong flavonur chinese spirits,which delayed the ester hydrolysis of base liquor to a certain extent in the storage process. The chinese spirits fermented by the solid fermentation process of double-style liquor is conducive to wine storage.
