Since Reform and Opening from 1978 in China, with the development of urban construction in Hohhot, as well as the acceleration of urbanization in rural areas and pastoral areas in Inner Mongolia Autonomous Region, a large number of Mongol nationalities flow into the city to study, work and spend their life. The diet culture characteristics of Mongolia nationality all originally formed in agriculture, animal husbandry and semi-agricultural and semi-pasturing industry is clear. However, with the Mongolia people to enter the city, original food culture is constantly running in with the new nature and social environment. The external environment and policies of Hohhot city provide the living soil for the Mongolia national food culture, as well as make the national diet to participate in the stage of multicultural diet, taking part into the competition of Mongolia family table.Mongolia ethnic group, on the one hand, keep in touch with the traditional diet through a variety of ways, such as the flow of home materials to the city. On the other hand, they borrow selectively from other national food culture and the advantages of modern diet idea, making innovation in the national diet culture which could not meet their own needs, such like a more balanced diet, Han’s cooking methods. Some diet folk function is replaced by other ways, some of that even gradually disappear from their daily life.Mongolian restaurant is another change in the form of the Mongolia people’s food. Mongolia diet commercialization should be born in Hohhot diet market demand, which is affected by the overall economic environment and consumer awareness of the consumption. They have an occurrence of interactive relations. Market oriented restaurant is Mongolia Mongolian food culture exhibition venues. It is also a gathering place of the collision of the "traditional" and "innovation", providing a new view in order to study the change trend of Mongolian diet culture.This paper is divided into three parts. The first chapter introduces the Mongolia family of three diet list, the Mongolia nationality diet under the formation of agriculture, animal husbandry and animal husbandry production, including the formation mechanism and their characteristics.The second chapter introduces the urbanization background of the Reform and Opening in Inner Mongolia, and then combs the changes of local Mongolian food culture on the basis of the original, and analyzes the reasons for the change.The third chapter introduces the process of the commercialization of the Mongolian meal in Hohhot since the market economy, as well as operating characteristics of contemporary Mongolian restaurant in different types and sizes. Then focus on the analysis two types of interaction (Mongolian meal industry and market environment, and Mongolian meal industry and consumers of Mongolian).At last, it tries to speculate the change of Mongolia city residents’ diet culture from the development trend of Mongolian meal industry.
