Zizyphus jujuba Mill.cv.wuhexiaozao was a valued variety, which was popular for its thin stone and good quality. And it was used to eat fresh and process. In this experiment, "Wuhexiaozao" was the main object, with Zizyphus jujuba Mill.cv. jinsixiaozao as the control. The developmental anatomy, physiology and biochemistry of Jujube stone were studied. The main results were as follows:1 The development of stone in "Wuhexiaozao" could be divided into three stages: (1) stone initial stage (from flower bud period to 14-day after full bloom),(2) stone formation stage (from 15-day after full bloom to 39-day after full bloom,(3) stone hardening stage (from 40-day after full bloom to mature).2 The difference of stone development of "Wuhexiaozao" and "Jinsixiaozao" on anatomy was as followed (1) the number difference of stone cell layer. In middle formation stage, cell had been stop dividing and start to swell .The number of cell had been definitive basically. The inside stone was composed with 3 to 4-layer cells in "Wuhexiaozao", but 6 to 7-layer cells in "insixiaozao" .The outer stone was made of 8 to 10-layer cells in "wuhexiaozao", 30 to 32 -layer cells in "Jinsixiaozao". (2) the lignification level of stone cell. The outer stone cells were partly lignified in "Wuhexiaozao", however in "Jinsixiaozao" were wholly lignified. And the level of lignifying in the latter was heavier than the former.3 The phenol content change of "wuhexiaozao" stone had a tendency of increasing firstly, and then decreasing .The tendency of "jinsixiaozao" was similar to that of "wuhexiaozao". During the stone development, the phenol content in "wuhexiazao" was less than that of "jinsixiaozao" in the formation stage. The phenol content of flesh was less than that of stone in different stages.4 The lignin content of "wuhexiaozao" stone had a lightly increasing tendency, and entering into stone lignifying, the lignin content was distinctively less than that of "jinsixiaozao". From the formation stage to the hardening stage, the lignin content of "jinsixiaozao" stone had a significant increasing. The lignin content of flesh was less than that of stone in different stages.5 The activity of PAL, POD and IOD, which were related to the lignin synthesis, had a similar tendency of increasing firstly and then decreasing in the development. In the formation stage the peak point of "wuhexiaozao" was lower than that of "jinsixiaozao".6 The change of hormone content had a same tendency in "wuhexiaozao" and "jinsixiaozao". But in the hardening stage, the content of GA3 and IAA of "wuhexiaozao" was higher than that of "jinsixiaozao", but ABA content of "wuhexiaozao" was lower than that of "jinsixiaozao".
