Methyl Jasmonate (MJ) is an important signal substance and also newly found plant hormones, which play a crucial role in regulation of physiological action. Fruit colour is an important index of fruit quality, which is related to market value and economic benefit. In this experiment, "Starkrimson" and "Red Fuji" were stadied in the way of the treatment of cropping , postharvest fruit and the culture of pericarp discs. The effect on physiogical and biochemical indies during fruit colour development by MJ treatment was researched . and the mechanism of the formation of fruit colour by MJ treatment was discussed. It is helpful to further reveal and improve the basis theory of fruit colour development. Meanwhile, It provided the theoretical base for improving fruit colour development and regulating fruit colour development. The main results were as follows:1. M J promoted decomposition of Chlorophyll in peels of apple. The effects were the most significant injected with 2 10-3 mol-L-1 MJ solution, which made Chlorophyll a. Chlorophyll b. and the content of Chlorophyll decrease 65.2%, 55.6%, 61.4% respectively. The effects were the strongest sprayed with 2 10-3 mol-L-1 MJ.2. MJ promoted the accumulation of carotenoid, the best effects of injected sprayed were 2 10-3 mol-L-1.3. MJ promoted the synthsize of anthocyanin the effects were the strongest injected with 2 10-7 mol-L-1 and 2 10-6 molT-1, while the most significant effects were sprayed with 2 10-3 mol-L-1 MJ. Scanning analysis of anthocyanin indicated that MJ could changed some substances of anthocyanin.4. Treated with MJ the activity of EFE was increased, the production of ethylene was enhanced, which indicated that MJ and ACC could significantly increase the production of ethylene.5. MJ significantly increased LOX activity in apple pericarp. LOX activity in "Red Fuji" and "starkrimson" apple pericarp achieved the highest level when treated with 2 10-5moI-L-1 and 2 10-7mol-L-1 MJ respectively. In one word, MJ promoted the synthysis of ethylene by increasing the activity of EFE, which promoted the fruit color development.
