Nondestructive analysis technology is a high technology developed these years and applied into industry and agriculture widely. Near infrared technology is one of important nondestructive technologies. Sample has weak absorbance in short near infrared range so that near infrared can acquire deep-seated information of sample without pretreatment. Based upon this, a portable instrument is developed to detect apple water-core. 100 apples are detected and the result is satisfied. Non-water core apples > class 3 apples and class 4 apples can be distinguished completely. Class 2 water-core apples get better during store, so it does no harm to consumer and storing if class 2 water core apples mixed into non-water core apples.Another part of the study is to study the short near infrared transmittance spectroscopy of apple and tomato on grating near infrared instrument then to establish mathematic model of apple Brix , rigidity and tomato lycopene. The coefficients of all models are above 0.8 which approves it is feasible to use short near infrared transmittance spectroscopy to non-destructively analyze internal qualities of fruit. At the range of 900nm to llOOnm, the energy transmitted sample is low, so the study improves the transmittance method, shortens the light path and decreases the influence of the size of fruits, which establish the foundation of studying fruit internal quality portable instrument.
