Using yan chang chestnut from Changping County as the experimental material, the physiological and biochemical changes of the chestnut in different water-curing treatments, concentration of sodium hypochlorite, treated time and growth regulator, were studied in this paper. The results are following:1. The effects varied with different storage conditions and different water-curing treatments. The effect of cool storage was much better than that of sand storage in natural temperature. Cool storage could significantly inhibit budding of chestnut during storage. After 180 days of cold storage, budding rate was zero, and quality was stll well.2.Among these water-curing treatments, the best treatment concentration of sodium hypochlorite solution was 500mg.L-1. The best time of water-curing treatment was three days after emitting air bubble. These could sterilize chestnut effectively, prevented pathogenic bacteria from infecting and spreading because of the water immersion, and made chestnut storage quality unaffected.3. Adding NAAand ABA could significantly inhibit activity of amylase and consequently benefit amylum conservation. But the effect of inhibiting budding was not significant.4.Water-curing treatments can restrict respiratory intensity. During cold storage, it could restrict the activity of amylase and slower hydrolyzation speed of starch. And then keep the chestnut quality well. It can also keep high activities of chestnuts' PPO, CAT, SOD during the storage period, which effectively cleaned activated oxygen in chestnuts, alleviated the harm of activated oxygen on chestnuts' histiocyte, maintained its own ability that fight against senium, and prolonged chestnut's storage period.5. Different concentrations of sodium hypochlorite solution and different time of water-curing treatments could significantly inhibit PPO activity, but the effect of adding plant growth regulator was not distinct.6.The properties of water-curing treatment is easy operating, and the effects is significant. It foundated the theory of chestnut storage and offered a guidance for chestnut storage practice.
