Rice is the main grain in our country. Rice crude protein(CP) and amylose content(AC) are mainly detected items in rice resource identification and breeding.In this study, the qualities of single rice were investigated by near infrared transmission spectroscopy, using the UV-VIS(NIR) spectrophotometer. In the prediction, correlation coefficients were 0.84 for CP and 0.83 for AC, while SEP were 0.45 for CP and 1.11 for AC. The Relative Standard Error were 4.0% for CP and 6.4% for AC.Furthermore, near infrared reflectance spectroscopy was used in qualities analysis of single rice and single rice brown, using the EWS Analyzer. In the prediction of single rice, correlation coefficients were 0.88 for CP and 0.86 for AC, while SEP were 0.34 for CP and 0.78 for AC. The Relative Standard Error were 3.1% for CP and 4.6% for AC. In the prediction of single brown rice, correlation coefficients were 0.83 for CP and 0.88 for AC, while SEP were 0.56 for CP and 0.89 for AC. The Relative Standard Error were 5.1% for CP and 5.4% for AC.From the above discussion, we can see that the EWS NIR Analyzer is more suitable in quantitative analysis compared to UV-VIS(NIR) Spectrophotometer. The result of rice qualities analysis is better than brown rice. The Relative Standard Error corresponded to that of the standard method. So, NIR can be used in single rice quality determination.
