In order to ascertain hydro-chemical factors' influence on aquatic product quality and provide scientific basis for improving water environment in mountain-area ponds and producing free-pollutant aquatic product, the research has been done on correlation between hydro-chemical factors and muscle composition and quality of fish through examining main hydro-chemical factors'contents (pH, SS, CODcr, ∑ P, NH3-N, NO3-N, NO2-N, phenol, mineral oil) and muscle nutrition composition of fish (coarse protein, coarse fat, water, amino acid) and phenol contents in three ponds from different water sources. The results indicate:1. contents of SS and CODcr Type I pond>Type II pond >Type III pond. The contents of SS and CODcr in Type I pond exceed those in Type III pond , In terms of Type II pond and Type III pond, there are few differences.2. contents of ∑p and NO2-N The contents of ∑P and NO2-N exceed quota in three ponds, but there are few differences.3. contents of phenol and NH3-N Type I pond >Type II pond >Type III pond. The contents of phenol and NH3-N in Type I pond far exceed those in Type II pond and Type IE pond, however, there are few differences in Type II pond and Type III pond.4. content of mineral oil Type I pond >Type II pond > Type III pond. The content in Type I pond far exceed that in Type II pond and Type III pond. The content in Type II pond far exceed that in Type III pond.5. contents of coarse protein, coarse fat among grass carp, chub and carp from three ponds Type I pond >Type III pond >Type II pond, and the contents in Type I pond far exceed those in Type II pond , the contents in Type III pond exceed Type II pond.6. contents of amino acid among grass carp, chub and carp Type III pond > Type II pond > Type I pond. But the content of grass carp's alanine (Ala) in Type III pond exceed that in Type I pond and Type II pond, the contents of glutamic acid(Glu), aspartic acid(Asp) and glycine (Gly) in Type III pond far exceed those in Type I pond and Type II pond.The contents of Glu, Asp and Gly in type II pondfar exceed those in Type I pond.7. contents of muscle phenol among grass carp, chub and carp Type I pond > Type II pond > Type III pond. The contents in Type I pond far exceed those in Type II pond and Type III pond. The contents in Type II pond far exceed those in Type III pond. There are differences among different fish, that is carp>chub>grass carp.In terms of water quality and the main composition of fish, the results indicate: all of three ponds are polluted, but water quality of Type III pond is best. Pollution in Type I pond is very serious, especially, the content of phenol in carp far exceed quota.
