Brasenia schrebei, proto perianth subclass, waterlily family and Brasenia schrebei category, is a kind of perennial herbage plant growing in fresh water. It is widely known as its numerous gel polysaccharide and rich in Zinc. The polysaccharide from tender leaves has several physiology functions such as declining blood sugar and anti-cancer; the Zinc is also the element necessary for human, and there are many kinds of enzyme consisting Zinc. The relationship between Zinc and organic development, skeleton growth, immune enginery, sex development and its function, the metabolism of protein and nucleic acid, enzyme activity, and then Zinc lacking is also relative with male sterility, acute myocardial infarction and so on. Zinc lacking exists widely in our country. The investigate datum indicate that the ratio of Zinc lacking in children is 62%, and that in pregnant women's diet is 50% in our country. So, Brasenia schrebei not only improves nutrition, but also cares health and makes infantile growing healthily.Aim: this article studied the separation condition of vitro gel of Brasenia schrebeVs tender leaves and its basic component, the separation rule of Zinc in various organs and biomacromolecule of Brasenia schrebeVs tender leaves, that laid the groundwork for deep-processing Brasenia schrebei; At the same time, the purification of protein rich in Zinc laid the groundwork for studying its structure, characteristics and the binding organism between Zinc and protein.Methods: this article determined the separation conditions of the vitro gel through orthogonal test; the vitro gel was separated into two parts by use of spray drying, and the content of their protein, polyphenol and polysaccharide were tested by Coomassie Brilliant Blue G-250, prussian blue and anthrone-sulphuric acid; the Zinc content was tested by flame atomic absorption spectrometry; the protein rich in Zinc was purified by use of gel filtration, and its amino acid was determined by HPLC.Results: 1. the separation conditions of the vitro gel: the solution temperature was...
