The experimental study took the two different cultivars of potatoes, Desiree and Zihuabai, as the study objects. The potatoes tested were from the Hohhot suburb of Inner Mongolia. The test was carried on different load. Through test and analysis the load and unload creep curves of the test potato, a four elements Burgers model was put forward. The test potato's creep parameters were obtained and the correlation between creep parameters was analyzed. After study on the creep properties and the effect factors of test potatoes, the five factors, load, density, water content, starch content and reducing sugar content, which affect creep behavior were found out. The main reason why the creep parameters were different under the same static load for different conditions, i.e. potato cultivars and sampling part, were discovered.According to the results of the potato creep test, the four elements Burgers model was built by ANSYS software. After running the model on ANSYS, the load affecting the potato creep characters was discussed deeply using the ANSYS analysis results.
