The experiment measures the content of anthocyanine in Blomidon, Northland and Bluecrop through color value. The result shows that when the fruits originally ripen, the content of anthocyanine is low; while the fruits ripen more and more, the content of anthocyanine gests higher and higher; in the end, the content of anthocyanine decline a little. In different kinds of blueberry, the content of anthocyanine is different. In the three kinds that we measured, the color value of Northland is 53.9, which is the highest; the color value of Blomidon is 42.9; and the color value of Bluecrop is 29.7, which is the lowest..The experiment measured the content of sugar and acid separately in Blomidon, Northland and Bluecrop through anthrone-sulphuric acid colrimetry and NaOH aikalimetrictitration. And it analyses the degree that the ratio of sugar to acid could affect the content of anthocyanine. When the ratio of sugar to acid in Blomidon is 8-12, the correlation between the content of anthocyanine and the ratio of sugar to acid is positive; When the ratio of sugar to acid in Blomidon is more than 12.2, the correlation is negative. The trend of correlation in Northland is the same to the trend in Blomidon. And in the harvest time, the correlation between the content of anthocyanine and the ratio of sugar to acid is always positive. The result shows that there is a remarkable correlation between the content of anthocyanine and the ratio of sugar to acid. To some extent, the correlation between the content of anthocyanine and the ratio of sugar to acid is positive.We harvest the blueberry when the content of anthocyanine reaches the highest level. According to the dynamical analysis, we draw a conclusion that: the Blomidon ripen earliest, and the best harvest time is the last ten days of July. The Bluecrop and Northland ripen later, the best harvest time are from the end of July to the middle ten days of August and from the last ten days of July to the middle ten days of August, and the period is longer.The author take Northland of blueberry as samples for distilling the VMA. After comparing of the general method and ultrasonic method in extracting VMA, the paper draw a conclusion that ultrasonic method is better. In single factor experiment, the author investigate that the temperature and solvent concentration have an effect on the extraction rate respectively, and ascertain the temperature is 40 °C...
