Tea leaves contains abundant catechin, caffeine and theanine and other secondary metabolites, while also rich in flavonoids, phenolic acids, tea saponin, sugars, organic acids, amino acids and aromatic substances such as metabolic product.the quality of fresh tea leaves constitute the characteristic components.The application of metabolomics in the research of fresh tea leaves quality, is helpful for not only revealing the mechanism of formation, transformation and relationship of the major characteristic quality components in fresh tea leaves such as Catechin, Caffeine, amino acid, Flavonoids , aroma and so on, but also for supplying the clue for tea breeding and quality improvement using modern biotechnique methods.Tea variety "Longjing 43" serve as the research system in this paper, and the metabolic profiling platform based on the fundmental techniques and methods involved in sample preparation, sample detection and data perform were implored, through the metabolic spectrum analysis of fresh tea leaves components ( including catechin, caffeine, flavonoids, amino acids and aromatic substances, etc.) in different growth stages ,to search the the process of formation and transformation rules. ,which can help to reveal the complex physiological and biochemical metabolism of quality formation. The main results are as following:The contents of volatile composition in fresh tea leaves with different leaf ages are very different. Generally, the content in functional leaf are the highest. Next is one sport three leave,one sport one leaf and one sport two leaves are lowest.Meanwhile,the effect of different light quality is also significantly different, the content in one sport one leaf dealing with blue film and yellow film are most highest.The contents of non-volatile composition in fresh tea leaves with different leaf ages are very differen. Generally, the content in one sport one leaf are the highest. Next is one sport two leaves, one sport three leaves and function leaf are lowest.Meanwhile, the effect of different light quality is also significantly different, the content in one sport one leaf dealing with white film is most highest. the content in one sport two leaves dealing with blue film and red film are most highest. The one sport three leaves dealing with blue film is most highest.the content in functional leaf dealing with white film is the most highest,and next is the yellow film.The contents of Amino acids in fresh tea leaves with different leaf ages are very different. Generally, the content in one sport two leaves are the highest,next is one sport one leaf,and one sport three leaves and functional leaf are lowest. Meanwhile,the effect of different light quality is also significantly different, The content dealing with Green film is the most highest,and next is the red film.The contents of catechins, caffeine, flavonoids in fresh tea leaves with different leaf ages are very different.Generally,the content in one sport one leaf and one sport two leaves are the highest,next is in one sport three leaves and functional leaf. Meanwhile,the difference of effect between different light waves is also very significant.The content in one sport two leaves dealing with Green film is the most highest,and next is the blue film.
