South American blue shrimp (Litopenaeus stylirostris (Stimpson, 1874)), also named blue shrimp (Penaeus stylirostris), is distributed in coastal of East Pacific of Latin American and categorized under the large size economic species in temperate water zone. It's one of the major farmed shrimp species in the world. The species is characterized by fine flesh quality, delicate meat and good taste, high nutrient, thin carapace, high eatable ratio, large body size, fast growth, high yield, high adaptability, disease resistant, omnivorous, wide source of feed and lower salinity water environment. It can be acclimated to fresh water. This species is mainly cultivated in Panama, Venezuela and other South American countries with commercial production. In recent years, more and more research projects on farming technique have being started, and more and more farmers involved in grow-out production since disease resistant to the TRV.L. stylirostris was introduced into China by Wuxi Hufeng special aquatic products limited company in 2004. The biological characteristic, farming technology and muscle nutrient composition were studied. The preliminary research results on nutrient composition, growth and key technical skills and experiences in farming operation have been obtained.This paper summarized the biological characteristics both in adult and larva stage of L stylirostris, included taxonomy, morphology, ecological and breeding habit etc. The paper also provided the results of nutrient composition analysis in muscle, post-larvae acclimated to fresh water and grow-out culture technique under the fresh water environment.Scientific name of South American blue shrimp is Litopenacus Stylirostris. It belongs to the same genus level to South American white leg shrimp (P. Vannamei) and sub-genus Litopenacus.Taxonomic hierarchy of Litopenaeus Stylirostris: Phylum Arthropoda, Class Crustacea, Subclass Malacostraca, Order Decapoda, Suborder Dendrobranchiata, Family Penaeidae, and Genus Penaeus Subgenus Litopenaeus.
