The effects on quality changes,ethylene production and membrane lipid peroxidation of 1-MCP treatment on'Qinbao'winter jujube at cold temperature were studied. in these thesis. The physiological and biochemical mechanism of 1-MCP on controlling the process of horticultural products senescence was also thoroughly discussed through analyzing the effects of 1-MCP on main postharvest physiology and protecting enzymes,which provided theoretical base and new possible method of winter jujube fresh keeping in practice. The results showed:(1)The fresh-keeping effect of winter jujube was observably improved by 1-MCP treatment. The optimum concentration of 1-MCP was 0.3mg·L-1 to 0.5mg·L-1 in the condition of fumigating for 24h.(2) Winter jujube was non-climacteric fruit, which has no typical respiration peak .The respiration rate were remarkably degraded by 1-MCP treatment.(3)1-MCP treatment effectively depressed the ACS activity in the first 42days ,the ACO activity from 35 days after storage and the ethylene production rate during the whole storage.(4) The descend of fruit firmness and water content were strongly slowed,while the increase of amylase activity and descend of starch content were inhibited by 1-MCP treatment,which prevented softening and water loss of fruits.(5) 1-MCP treatment made for keeping fruits quality .The content of Vc and chlorophyll were significantly reserved. The treatment of 0.3 mg·L-1could postponed the variation process of total soluble solid.(6) The increase of conduction and accumulation of MDA were significantly restrained by 1-MCP treatment.(7)The activity of SOD,POD,CAT were distinctly preserved by 1-MCP treatment..The appearing time of SOD peak and the first POD peak were delayed for 7days. The treatment of 0.3 mg·L-1 delayed the appearing time of first CAT peak for 7days.
