Furazolidone is a nitrofuran antibacterial agents (antibiotics) and has been widely used in the form of food additives for the treatment of gastrointestinal infections since 1940s. Because furazolidone and AOZ (the metabolite of furazolidone) are carcinogenic and mutagenic, furazolidone is put on the list of banned substances by most countries (including EU, USA, China, Japan).Compared with the short half-time of the parent compound (furazolidone), AOZ persists for longer periods. Therefore, the measurement of the parent drugs in animal tissue is generally not enough. It is necessary to establish an accurate and reliable method for analysis of AOZ residue.This paper studies the analysis of AOZ residues in aquatic products using LC-MS/MS, a method of measuring AOZ residues in aquatic products using LC-MS/MS is established. The method established in this paper is put to use in measuring AOZ residue in samples. The results obtained from this paper are as follows:(1) The establishment of the method of measuring AOZ residues in aquatic products using LC-MS/MSThis paper analyzes AOZ residues in different aquatic product using Liquid Chromatography /Electro-spray Ion Trap mass spectrometry. The studies include a previous extraction of the metabolite, parameters of HPLC and Electro spray ioniza-tion (ESI) MS/MS. A LC - MS/MS method of measuring AOZ residues in aquatic products is established in this paper.
