Based on the technology of pond aquaculture of Grass carp (Ctenopharyngodonidellus) and Pengze crucian carp(Carassius auratus pengze Var) in Maolian Lake,the author quests for two pond aquaculture patterns—versa-seasonal aquaculturepattern and angling aquaculture pattern; Meanwhile, establishes the operatingregulation of HACCP in pond aquaculture with the principle of HACCP.Versa-seasonal aquaculture pattern test: Grass carp and Pengze crucian carp wereraised in a pond of 1.04 hm~2 from November to next November. Most of fish arestocked into the pond from November to the next February, Commercial size Grasscarp, Pengze crucian carp, bighead are 3150kg, 1370kg, 400kg and their juvenile480kg, 670kg, 100kg, respectively. And they are sold between April and September.The versa-seasonal price of commercial size fish was 1.4-3.6 yuan higher than that innormal season. The the ratio of input to output was 1:1.51.Angling aquaculture pattern test: In two 1.78hm~2 ponds, aquaculture and anglingare combined commendably. The commercial size fish are stocked into ponds at adensity of 25,000 kg per hm~2 in spring and autumn and 15,000 kg per hm~2 in summer.Do well daily management. Angling is mostly arranged on weekend in Spring andAutumn and two golden week. The fish is fattened in summer. Finally the ratio ofinput to output was 1:1.68.The operating regulation of HACCP in pond aquaculture: samples of water,mud, feed and fish of three ponds (parent fish pond, fingerling pond and commercialsize fish pond) are collected for determination of contents of heavy metals. Andfamiliar index of aquaculture water also examined. Then seven principles of HACCPare applied in the process of pond aquaculture. Existent and potential hazards(biological, chemical and physical hazards) are analyzed and corresponding preventmeasure are put forward in the whole process of pond aquaculture. Five criticalcontrol points (CCPs) are identified: CCP1—aquaculture site choosing and ponddesigning and building, CCP2—aquaculture water regulating, CCP3—fingerlingssupplying, CCP4—feed supplying, CCP5—disease preventing, the surplus steps of operating regulations is critical limits establishing, monitoring procedures, correctiveaction, record keeping and validating procedure.
