Chinese arrowhead (Sagittaria sagittifolia L.) is a perennial shallow water herb, and it is one of our country's aquatic vegetables which were planted in various parts of the country, mainly in the south of the Changjiang River basin and its provinces, cultivation each year in approximately 100,000 hectare. Edible part of Chinese arrowhead is accounted for 96%, which contains multiple nutrients, in addition to non-structural carbohydrate (sugar, starch), also contains calcium, phosphorus, potassium, sodium, magnesium and other minerals, vitamin B communities and betaine. In recent year, with the continuous development of Chinese arrowhead processing products, Japan's demand continues to increase, the area under cultivation is also rapidly expanding trend in Jiangsu Baoying county annual cultivation in 4000 hectare above.Cadmium (Cd) and Plumbum (Pb) are important contaminants in agricultural soil, and put great threaten to agriculture and human health. Changes of some physiological and biochemical indexes in leaves and roots of the Sagittaria sagittifolia were studied on jiangsu typically cultivars of'Suzhouhuang'and'Ziyuan'with different Cd and Pb concentrations. Studying on the differences among Sagittaria sagittifolia cultivars in the uptake, translocation and accumulation of Cd and Pb from soil and the mechanisms with different processing time. The results are useful in the selecting of the tolerance of Sagittaria sagittifolia cultivar to Cd and Pb,and the purposes of this research are mean to offer theoretics of producing safe Sagittaria sagittifolia in Cd and Pb contamination. The major results were showed as follow:1. Under different stress of Cd and Pb concentrations,the contents of soluble proteins in leaves and roots, the contents of chlorophyll, the rate of photosynthesis in functional leaves,the activity of roots descended with increasing of Cd and Pb concentrations at whole, but the membrane permeability in leaves and roots ascended along with the increase of Cd and Pb concentrations. At the same time the contents of soluble proteins of leaves were higher than which of roots, the membrane permeability of roots were higher than which of leaves. The contents of MDA in leaves and roots increased with increasing of Cd and Pb concentrations, and the content of MDA in leaves were higher than which of roots.2. Under different stress of Cd and Pb concentrations,ativities of SOD and POD in functional leaves were increased when lower Cd and Pb concentrations then decreased when increasing of Cd and Pb concentrations. But the activity of CAT was contrary and began to ascend when Cd concentration reached to 20mg/L as well as Pb concentration reached to 100mg/L.3. After treated with the same thickness of Cd, the contents of Cd in leaves and roots rised in increasing process time, and the content of Cd in roots is hingher than in leaves at the same time. Residues of Cd and Pb in corms were increased when increasing of Cd and Pb concentrations, residues of Cd and Pb in nude corms were the lowest of all parts of the corms, and residues of Cd and Pb in corms of'Ziyuan'were higher than those of'Suzhouhuang'. The yield was decreased with increasing of Cd and Pb concentrations.
