This thesis studied the condition of growing alfalfa sprouts enriched the iron and zinc,the nourishment of alfalfa sprouts and the absorption of the iron zinc inside alfalfa sprouts etc. The Experiment was divided into six parts.The specific as follows.The first experiment:To study the optimal soak time of alfalfa spouts in soilless culture.Select different soak time 4 to 24h,and cultivate for 7d in 25 degree,humidity 75 percent Artificial Climate Box.Determine the germination capacity,the water absorption,the length of sprouts,the protein contents,the fat contents and the ash contents.The results showed that the germination capacity of seeds soaked for 8 to 10h was higher comparatively.The water absorption soaked for 4 to 10h gradually increases,but there is no obvious difference after 10h.The protein content is highest when soaked for 8 to 10h,about 35percent;The content of fat and ash decrease with time protracting.The fat content is higher during 4 to 12h,about 4.5percent.The time of higher ash content is soaked for 4 to 8h,about 0.59percent.The experiment showed that soak time affect alfalfa sprouts in soilless culture.The optimal soak time is 8 to 10h.The second experiment:To study the apporitate illumination,temperature and humidity for cultivating alfalfa sprouts in soiless.Though cultivating alfalfa sprouts,selecting different illumination,temperature and humidity and cultivating for 7d in 25 degree,huminity 75 percent Artificial Climate Box.Determine the germination capacity and weights of hundreds of plants to confirm the best,temperature and humidity.The result showed that the illumination condition have no markedness in germination capacity.When had no lights,the weights of hundreds of plants was lower than lightness.When the temperature were 25 to 30 degree,the length of plants have no diversity,when the temperature was 20 degree,the length of plants have diversity with the other temperatures.When the temperature was 20 degree,the weights of hundreds of plants was lowest.when When the temperature was 35 degree the weights of hundreds of plants was lower. When the humidity were 70 to 80 percent,the germination capacity was higher.When the humidity was too high or too low,the germination capacity was lower.When the humidity was 60 percent to 90 percent,the length of plants or the weights of hundreds of plants had no diversity.The third:experiment:To study selecting appropriate alfalfa variety to cultivate alfalfa sprouts without soil.Selected the best variety from Hunter River,Algonguin,Legacy,Golden Queen, Millionaire,Alfalfa king,ArcherⅡ,WL414.After soaking 10 hours,cultivated for 7d in 25degree,huminity 75 percent Artificial Climate Box.Selected the best breed through determining the water absorption,accounting germination capacity,determining length of sprouts, weights of hundreds of plants,the content of protein,fiber,fat,ash,etc.The results showed WL414 had the highest germination capacity,weights of hundreds of plants.The nutrients was very enrich.The next breed was ArcherⅡ,the item is little lower than WL414.The others were lower than these two breeds.So selecting WL414 to cultivate alfalfa sprouts was appropriate.The forth experiment:To study the cultive condition of iron or zinc enriched alfalfa sprouts. Grow alfalfa sprouts with different concentration of ferrous sulfate or zinc sulfate liquid in 25degree,huminity 75 percent artificial climate box for 7 d.Through accounting germination capacity,determining length of sprouts,weights of hundreds of plants and the content of iron or zinc in sprouts by atomic absorption spectrometry and select the optimal concentration.With the concentration increasing,germination capacity and weights of hundreds of plants decreases,the content of iron in iron enriched alfalfa sprouts increases,yet the zinc content decreases;the content of zinc in zinc enriched alfalfa sprouts increases,yet the iron content decreases.When the concentration were 550 to 600mg/kg,the antagonizing effect of iron and zinc in alfalfa sprouts were least,the contents of iron and zinc were proportioned.When the concentration of liquid were 550 to 600mg/kg,the accumulative effect in iron or zinc enriched alfalfa sprouts are the best.The fifth experiment:To study the cultivation condition and cultivation methods of iron or zinc enriched alfalfa sprouts.Grow alfalfa sprouts with different concentration of ferrous sulfate and zinc sulfate liquid in 25degree,huminity 75 percent artificial climate box for 7 days.Through accounting germination capacity and the content of iron or zinc in sprouts by atomic absorption spectrometry,To select the optimal concentration and cultivation methods.The result indicate with the concentration increasing,germination capacity decreasing,but the content of iron and zinc enriched alfalfa sprouts increaseing.When accumulating zinc first in 0 to 3.5 days, accumulating iron second in 3.5 to 7 days with the same solution concentration,the germination capacity and the quantity of zinc were the highest,but the quantity of iron was the least. Considering germination capacity and the quantity of zinc and iron,the concentration of liquid were 550 to 600mg·kg-1,accumulating zinc first in 0 to 3.5 days,accumulating iron second in 3.5 to 7 days,the result was the best.The sixth experiment:To study the alfalfa sprouts that enriched iron and zinc infect rats and the poisoness of alfalfa sprouts enriched iron and zinc.Through feeding rats using alfalfa sprouts, ferrous sulfate and zinc sulfate.Determining growth,death rate,absorption,iron and zinc enrichment discipilinarian in rats.The result showed that the alfalfa sprouts group had stronger ablity to accelerate rats growth than abiosalt.Along with dose increasing the rats growth decreasing.The abiosalt group had strong poisoness to rats than alfalfa sprouts.Along with dose increasing,the iron and zinc in rats increasing,but the absorption decreasing.Feeding with alfalfa sprouts,the contents of iron and zinc in rats were higher than feeding with abiosalt.
