Peanut is one of the main agricultural products in China, with the further development of peanut industry, it will be a great significance for efficiency of agriculture, farmers income and improve the international competitiveness of agricultural products. Biological pollution is one of the important factors of the impact of food safety in peanuts. It's difficult to control the microorganisms during the peanut storage and processing. Some harmful substances such as coliform and aflatoxin are easy to exceeded. It is very harsh for determining standards in peanut exports. So we must pay more attention to the security control in peanut storage and processing.This study focus on the security control in the peanut storage process, to provide refereance for import and export enterprises or testing organizations. There are include: rapid detection of coliform technology research, rapid detection of aflatoxin research, water activity and its relationship between aflatoxin, a new aflatoxin detection methods as LC-MS/MS studies.In the rapid detection of coliform technology, comparison with 3M paper method and the traditional method as rapid detection of the GB method , experimental results show that the rapid detection of GB method and 3M plate method have no significant difference in the results, 3M paper method for Food Samples edge detection, easy operation, high accuracy and save time; In the study of detecting Aflatoxin shows that Spectrophotofluorimetry Detect Aflatoxin is to be quantitative accurately, and the average recovery was 81.8%, the average coefficient of variation was 5.29%, Post-Column Derivatization High Performance Liquid Chromatography Fluorescence validates its test results, T-test shows no significant difference ,and fluorescence detection meet the requirements; Water activity studies have shown that the use of coordinates insert method can achieve very good results, and 1g plus is the best sample volume, and determine its standard salt, NaOH, Mg (NO3)2, NaCl.; Research has shown that the correlation coefficient of AFTB1 content and Aw value in peanut kernels, pignut and peanut-skin are 0.6464, 0.7723, 0.8377; When Aw value is higher than 0.6, the correlation coefficient between two are 0.8537,0.9537 and 0.9376. the result showed that : it's high degree of correlation between Aw value and AFTB1 happened level. And the AFTB1 happened level of pignut and peanut-skin were higher than peanut kernels. So, the Aw and peanut-skin treatment are key points of AFT control in peanut storage and processing; LC-MS/MS detection method shows its AFTB1 and B2 respectively, the detection limit is 0.15μg/kg & 0.09μg/kg , recovery was 84.3%~107.5%, relative standard deviation was 5.3%~9.7%, these are an efficient, accurate, time-saving method for rapid detection.
