Propolis is a resinous substance which collected by honeybee from plant buds, trunk and wound, and mixed with wax, pollen and their mandibular gland secretions. Propolis is consisted of multiple biological and physiological substances with significant inhibiting effect on oral pathogenic bacterias. But its insolubility in water, easy adhesion and unpleasing smell limited the application of propolis. Chewing gum is a widely accepted food with characters of easy producing and convenient transporting and eating. Therefore, it is valuable to add the propolis in some way to chewing gum to made a porpolis gum for controlling the oral pathogenic bacterias.Four parameter ethanol concentration, extraction time, extraction temperature and ultrasonic processing time are involved in the extraction of propolis. the orthogonal test is employed to get the optimal parameter of the propolis extraction. The results showed that the optimal parameters of the propolis extraction are ethanol concentration, 80%; extraction temperature, 60℃; extraction time, 3h; ultrasonic processing time, 20min. Under the running conditions, the extraction yield of the propolis flavonoids was 21.4%, dry matter content was 50.7%.Furthermore, In order to improve the propolis'taste and avoid its adhesion, the extracted propolis was embedded withβ-cyclodextrin. Antimicrobial activity of the embedded propolis was determined using minimum inhibitory concentration (MIC). The results show the MIC is as low as 0.75%, which is same as the pure propolis.Finally, theβ-cyclodextrin embedded propolis was added to the chewing gum according to different proportion. The taste and minimum inhibitory concentration of the gum were determined. The results showed that the best recipe of the propolis gum is to add 3.00% propolis microcapsules The propolis chewing gum had a pleasant taste without decreasing its inhibiting ability on Streptococcus mutans.Our works provide a basement for propolis chewing gum production and its application on controlling oral pathogenic bacterias. Therefore, it is valuable in practice.
