Chinese flowering quince is a kind of fruit used as food and medicine. the industry has grown in strength scale. In the production process generated a large number of residue. The dietary fiber content of the Chinese flowering quince are rich, is an excellent raw material for extraction of dietary fiber. In this paper after the Chinese flowering quince juice residue as raw material Dietary fiber was extracted from wine fermented Chinese flowering quince residue in two fast and efficient ways:Microwave and Ultrasound-assisted alkaline. Optimum parameters of the technologies were ascertained, and the technology of extract dietary fiber from Chinese flowering quince residue by Ultrasound-assisted alkaline was studied with its optimum parameters were also ascertained. Analysing the impact, which resulted form different particle size, temperature and pH values, on physicochemical properties of dietary fiber products extracted in both tecnologies mentioned before has been done. Chief experimental results:1. Extract dietary fiber from Chinese flowering quince by Microwave:power of microwave was at 500W, pH value was 2, liquid-solid was 1:32(g/mL) and time was 135s. in this condition extracted dietary fiber from the Chinese flowering quince residue, the product extracting rate was 81.92%, TDF content was 90.67%, SDF content was 16.94%. the colour of product is yellow.2. Extract dietary fiber from Chinese flowering quince by Ultrasound-assisted alkaline: concentration of sodium hydroxide was 4%, power of ultrasound was 110W, temperature was 55℃,time is 80min and liquid-solid was 1:20(g/mL)。in this condition extracted dietary fiber from the Chinese flowering quince residue, the product extracting rate was 85.82%, TDF content was 92.25%, SDF content was 26.46%. the colour of product without bleaching was reddish brown.3. Ascertained in single-factor and orthogonal experiment, the optimum bleaching technology of sodium hypochlorite was:pH value was 4, temperature was 70℃, liquid-solid was 1:30(g/mL) and concentration of sodium hypochlorite was 6% whiteness value of the product was reached at 63.29 in this technology.The colour of dietary fiber is snow-white4. physicochemical property of two methods of dietary fiber products were better than Chinese flowering quince residue. In the neutral system at room temperature, the 60 mesh of wDF and uDF, which their Swelling force were 7.41mL/g, and 6.83mL/g, water holding capacity were 9.22g/g and 10.43g/g, oil holding force of 6.73g/g and 5.57g/g. With different conditions, raw material particle size on the two methods for extraction of dietary fiber products and raw materials were less impact on the physicochemical indicators, temperature and pH value on the physicochemical indicators of the impact to be more significantly; in the environmental conditions of simulating human body (pH=2 stomach environment and the small intestine pH=7), dietary fiber products on cholesterol, metal ion and nitrite ion adsorption capacity were studied and two kinds of dietary fiber products had a certain adsorption capacity.In summary:two low-cost extraction processes are fast and efficient and practical methods of extracting dietary fiber from Chinese flowering quince.
