We study on the change of the mould flora and the mycotoxin in different moisture content paddy at different storage temperature, which can provide scientific and trusty theory for the storage corporation .We utilized'feng liang you'paddy rice reaped in jiangsu provice in 2008 as material.we study on the moisture content changes of the paddy in different storage tempertature and the rules of the fungi changes ,the relation between the fungi and the mycotoxin, when the RH is 40-50%. Then we can find out the safety moisture content of paddy in different storage temperature.The results indicated that under the temperature of 15℃,20℃and 25℃,the paddy of 13 %,14 %,15 %,16 % and 1 7% MC are safety after 140 day's storage. Under the temperature of 30℃,35℃, the paddy of 13 %,14 %,15 % MC are safety after 140 day's storage, when the paddy of 16% and 17% MC are safety on mycotoxin after 60 day's storage,but they began to mildew.
