Objective: To study the knowledge, attitude and practice(KAP) on nutrition, the intake of every nutriment and body composition of university students, and to study diet factors' impact on body composition in order to provide the basis forfuture nutrition education and improve their nutrition and health conditions. Method:205 students (103 are male, 102 are female) of 3~4 grades in Shandong University, aged from 19 to 24 years old were studied. All of them were healthy and did not take heave physical practice. The content of the study included four parts as follows: (1) knowledge , attitude and practice on nutrition and daily dietary consumption were investigated through questionnaire survey. (2)Their dietary consumption for three continual days were studied by 24-hour history recalls. They were requested to write down the name and the amount of the food, fruit , sock and all other things they had eaten accurately, then the questionnaires were checked and finally the average calories and several kinds of nutriments' intake one person daily were figured out . The nutriments' intake is accounted as light labor. (3) The body composition were measured and analyzed by the bioelectrical impedance analysis. (4) They were divided into normal group(BF%=15±5% for male ,BF%=23±5% for female ) and obesity group(BF% > 20% for male , BF% >30% for female)by BF%, then the nutriments' intake and the KAP scores on nutrition were compared between the twogroups. Results: (1) the students did not have enough nutritional knowledge. In the fourteen questions, only three questions were answered correctly by over half of the students for male and seven ones for female. Apparently the female got higher scoresthan male on nutritional knowledge .A majority of the students had better nutrition attitude, but quite a part exhibited some unhealthy nutritional practice including selecting food according only to their appetite instead of their nutrition needs, low milk and fruit consumption. 52.4%females went on diet because they were fear of putting on weight. (2) The nutriments' intake for male is protein 75.55 g (100%RNI), vitamin A448.8 ugRE ( 56%RNI ) , thiaminel 1.32mg (94%RNI), riboflavin 0.93mg(66%RNI), vitamin C78.84mg(78%RNI), Ca 402.2mg (50%RNI), Fe 20.35mg(135%RNI), Zn 10.82mg(75%RNI). For female it is protein 50.55g(77%RNI) , vitamin A 425.3 ugRE (57%RNI) , thiaminel 1. 68mg(66%RNI), riboflavin 1. 23mg (62%RNI), vitamin C 73.07mg(73%RNI), Ca 337.34mg(42%RNI), Fe 14.73mg(73%RNI), Zn 7.58mg(65%RNI). The energy intake was 2254.51 kcal(93%RNI) for male, and 1646.93kcal (79%RNI) for female. The energy the three thermogenesis nutriments provided respectively is Protein 13.4%, fat 24.09%, carbohydrate 62.46% for males and 12.4%, 29.68%, 58.1% for females. Fine quality protein hold 35.2% of the total of protein for all the students. (3) Body weight, lean body mass and mineral of the males were significantly higher than those of the females(P<0.01), in which 64.08kg, 53.80kg, 3.46kg respectively for males, and 53.58kg,39.62kg ,2.70kg for females. The body fat and body fat percentage of the males were significantly lower than those of the females^ < 0.0l),in which 10.28kg ,15.79% for males and 13. 96kg, 25. 78% for females. Fitness scores of males and females were similar(p>0.05),in which 74. 6 for males and 74.94 for females. The obesity and malnutrition rate by BF% were 15.67%, 2.94% for males ,and 17.67%, 1.94% for females. (4) The KAP scores on nutrition and nutriments' intake between different fat-level groups were compared. We found that the energy and all kinds of nutriments between the two groups had no significant difference for male, and except the fat intake of the obesity group was significantly more than the normal group for the females, the rests were the same as males. Conclusion: The students in Shandong University had not adequate nutrition knowledge, exhibited irrational dietary deeds, but their attitude was correct. Most of nutriments' intake is lower compared to RNl, The proportion of the Fine qualityprotein was low too, and the energy intake of female was not enough. From the result of the body composition analysis the subjects were well-balanced but muscle mass seemed to be a bit lower. Except the fat intake by obesity group of the females was significantly higher than that of the normal group(P<0.05).the rests did not have significant difference between them. These indicated the body component was not only related with diet, but also related with other factors.
