Dental caries remains one of the most widespread diseases of mankind. An oral health survey in China revealed that three-quarters of five-year-old children studied had evidence of significant dental decay. Streptococcus mutans, a Gram-positive bacteria, is now well recognized as being associated with the initiation of dental caries, since it possesses several virulence factors that allow it to accumulate within the dental biofilm and produce and tolerate the acids that cause caries lesions. Therefore, it is essential to inhibit the growth of Streptococcus mutans and prevent bacterial colonization on the surface of tooth for the treatment of dental caries.Use of fluoride in its many forms, sugarless products and sealants, antibacterial agents, and increased access to dental care are among the approaches that have had a significant impact on the amount of disease of the young. But some of these approaches are limited their application owing to drug resistance and side effects. Researchers and product developers continue to search for products to reduce overall severity and prevalence of dental caries. Lysozyme, widely distributed among vertebrate and invertebrate animals, is a basic protein that can act as a bactericide. It catalyzes the hydrolysis of theβ-1, 4-glycosidic linkage between N-acetylmuramic acid and N-acetylglucosamine of the peptidoglycan, which is an important constituent of Gram-positive bacterial cell walls, with consequent lysis of the bacterial cell wall.
