Infants were developing the fastest growth and the most critical period in life.However,our country had about 1%-2% of infants with milk protein allergy and 30% of infants suffering from lactose intolerance.,these infants should not feed milk-based infant formula powder.But there was not the soy-based infant formula powder products in China's market currently.In order to solve the problem feeding these infants,at the same time,considering the infants'nutrional balance and the growth and development,to soy protein isolate as the main protein sourse of the soy-based infant formula powder was an important practical significance.In this study,according to infant growth and development of our country's physical cha-racteristics and nutrional needs,and the soy-based infant formula powder of the corresponding standards and regulations, we used EXCEL to design the soy-basd infant formula powder,definting product composition and process flow ai last. Main experiments included were as follows:formulation design of the soy-based infant formula powder,including the deployment of protein,fat,carbohydrates,vitamine and minerals and function of the added factor,and preservation of the experiment to accelerate the damage,digestion in vitro experiments, and nutrition evaluation of the protein.The results obtained by experiment as follows:(1) Soy protein isolate through the single factor experiment,to determine its adding soy protein isolate of 190kg(calculated in accordance with tons of powder).(2) Through the grease of orthogonal test,to determine the optimum combination of 11% of soy-bean oil ,10% of corn oil and 8^% of palm oil(qulity score).(3) Through the determination of the nutrient composition, the sensory evaluation and the microbial standard of the formula,its target value are in the framework of product standards,the formulation design and process flow of products air reasonable,the formula design of the soy-based infant formulapowder was: soy protein isolate for 190kg, soy-bean oil for 110kg, corn oil for 100kg,palm oil for 80kg,white sugar and maltodextrin for 550kg,vitamins,minerals and other nutrional elements for 3-5kg.(4) Through preservation of the experiment to accelerate the damage,and a comparative analysis of the experimental results on the preservation,at normal storage the target of the formula were in the product standards,to determine the product ai least 6 months.(5) Through the determination of protein digestibility in vitro digestion experiments,digestibility of the product was 74.47±0.36a,and there was no significant difference with the other two types of infant formula powder.(6) The product formula evaluate the nutrional value of protein through chemical score (CS), amino acid score (AAS), the ratio of coefficient of amino acids (RCAA), amino acids at the ratio of coefficients (SRCAA), essential amino acid index (EAAI), biological value (BV) and nutritional index (NI), the results showed that, the product formula for the first limiting amino acid was tryptophan, its absorption of essential amino acid content was slightly lower than the reference model of the infant, nutitional value of the product formula was no significant difference with other two commercial infant formula powder.Based on above-mentioned experimental result,the research showed that the formulations and processes of the soy-based infant formula powder correect,from the perspective of infant nutrition,the soy-based infant formula powder is safe,reliable and without side effects..And the nutrional value of the soy-based infant formula powder is equivalent with that of the milk-based infant formula powder.It is able to meet with lactose intolerance and milk protein allergy in infants of normal growth and development.At the same time,also applied to normal babies.
