Fruit industry is a substantial component in the social economy.It plays an important role in both the argriculture and sideline occupations and the market ecomomy.The research into the fruit industry of Tang Dynasty not only can make us better understand the general situation of the production of fruits at that time,also would it deepen our understanding of the history of the develpement of Chinese Fruits Industry.What's more,the precious lessons drawing from history will be of benefit to the innovation of fruits industry of today as well as to the constrution of the new countryside.The fruit industry covers a wide range of aspects such as the growing features and the planting techniques of fruits,fruit processing ,fruit circulation,selling and consuming and the promotion of it to the commodity economy.We mainly discuss these issues in the research of the fruit industry of Tang Dynasty.The inspection of the growing features and planting techniques of fruits are mainly based on ,,,, and many literature,poetry and other material,and also on the extraction of the accomplishments of comtemporaries.The fruits planting of Tang Dynasty has distinctive features such as numerous kinds,huge scale,wide spread and so on.The seize of the season,fme mangagement,graft and replant,cuttage and reproduction,introduction of foreign fruits,domestication and planting of wild fruits and growing melons where hotspings are around and other aspects all demonstrate the inheritance and innovation of the traditional planting techniques in fruits planting,and also optimise the varieties of the fruits and make the new kinds emerge.They all show the highly develpements of the fruits planting in Tang Dynasty.The inspection of the fruits processing is progressed with and all kinds of poems and materials.According to the analysis,people in Tang Dynasty used the fruits to make preserved fruit,stir-fried fruits,fruits oil,fruits drinks and even used with medicine after being processed.And there are still other ways to process them such as prickling,steaming and roasting.As to the circulation, selling and consuming of the fruits,with aboundant and well-qualified fruits,domestic traffic net extending in all directions and improvement made in the preserving technique of fruits providing great advantage to the circulation of the fruits,the fruits can not only be sold in near places,but also can be sold in big cities even long-distance places through transportation. The selling of the fruits are mainly through fruit market and fruits trades.As to the consuming part,the upper class of the society diversify ways of consuming as it is used in occasions like inviting and hosting, bribing,getting in touch of authorities, and also used as gifts presented to family and friends and as largess to ministers.The consuming also develops in a certain rate with middle and lower class.Fruits can be used to entertain guests and given as gifts to one another and also used in occasions like festivals.What's more,the demand increses a lot as offerings when it comes to offer sacrifices to gods.And the development of the fruit industry in Tang Dynasty have a speical encouraging impact on the social economy.First of all,it promotes the development of the agricultural economy,stimulates the farmers' enthusiasm for farming business.Second,it encourages the development of artisan industry and progresses in sugar refining industry,wine making industry and foods processing industry. Last but not the least,it positively affects the development of the commodity economy,enriches the commodity of Tang Dynasty and boosts the prosperity of the market.As we can see from the discussions extending in many angles on the fruit industry of the Tang Dynasty, the fruit industry of Tang really accomplishes enormous achivements and developments.
