This experiment collects malusasiatica 20 samples of two species in Hohhot, Inner Mongolia and Peach 50 samples of five species from the fruit store,its isolate 45 yeast strains and 75 yeast strains. According to the WL medium and combining the method of the conventional taxonomy classify yeast preliminarily. Study on the selection of high quality yeast strains of fermentation characteristics. High-quality yeast can be selected bred PCR 26S rDNAD1/D2/RFLP to analysis and identify.Test results show that:Three genera yeast were isolated and selected to malusasiatica from Hohhot in Inner Mongolia. They are Pichia、Brettanomyces、Candida; Three kinds were included namely Pichia sp.、Candida sake、Brettanomyces intermedius.Four genera yeast were isolated and selected to peach fruit from Commercially available fruit store. They are Hanseniaspora、Torulaspora、Pichia、Saccharomycodes; Four kinds were included namely Hanseniaspora uvarun、Torulaspora delbruekii、Pichia kluyveri、Saccharomycodes ludwigii.Fermentation characteristics research are tested from 19 strains. After a tolerance test analysis, the strain D20 and F10 have a prominent fermentation performance, they can at the sugar concentration is 50%, pH is 2.0, the high temperature 41℃, SO2 concentration is 330mg/L, alcohol is16% in the environment growing.After the experiment of alcohol content and the amount of residual sugar fermentation,the results are as follows:the alcohol content and residual sugar fermentation of strain F10 are 10.2% and 2.3, the alcohol content and residual sugar fermentation of strain D20 are 9.5% and 3.3.but they different samples, so the two strains of bacteria strains breeding as optimization test.Finally on strain D20 and F10 26S rDNADl/D2 sequence analysis, results show that the strain D20 and Pichia sp.(S432Y3) have homology 100%, through the systerm of the evolutionary tree, the strain D20 to Pichia; the strain F10 and Hanseniaspora uvarum strain (GSJYG3) have homology 100%,through the systerm of the evolutionary tree, the strain F10 to Hanseniaspora uvarum。...
