Based on Da Gua seed as raw material, using Da Gua seeds from alkali distillation in extraction and separation protein. By single factor experiment, and orthogonal test analysis, inspects solid-liquid ratio, Na OH concentration, alkali mention temperature, alkali Da Gua seeds to ask in time, the influence of extraction separation protein optimal extraction process parameters. The result shows that: when solid-liquid ratio of 1:4 and Na OH concentration 0.10 mol/L, alkali mention time for 4h, alkali mention temperature for 20 ℃ high, when conditions under which extracted Da Gua seed protein isolated for 63.2% extraction. and several factors on the functional characteristics of melon seed proteins are discussed, the influence of the application for Black water melon seeds protein provides theoretical basis. Black water melon seeds protein obtained by experiment the solubility of playing the lowest in p H4 and p H value increased with the increase in the solubility of a certain p H value and temperature were positively correlated; maximum water retention in the p H7, in a certainp H values.were positively correlated with temperature; oil absorption higher oil absorption in the low temperature; play black water melon seed protein foaming and foam stability when the strongest in the p H6, and greater than 6 and less than 6 were decreased, foaming at the worst worst p H2, p H10 when the foam stability in the worst; at p H4, the play black water melon seed protein emulsification and emulsion stability are minimal, and away from the isoelectric point to increase. With the increase of protein concentration, and stability of the emulsion has a tendency to increase.will Da Gua seed protein by replacing part of milk fermented make yogurt, already can relieve our animal protein resources, and the tense situation can realize animal protein and plant protein nutritional advantage complementary. This experiment mainly will Da Gua seed protein isolated dissolved liquid substitute partly milk preparation hair drunk yogurt, and its quality factors was studied. Results show that Da Gua seed protein isolated liquid the optimal concentration of 14%, substitution degrees 25%, sucrose substitutability 7%.
