Mushroom is a kind of edible fungi with rich nutrient, strong health care function and unique taste. In recent years, as people’s attitudes towards consuming change, market demand for fresh mushrooms increase. However, mushrooms are difficult to store and transport under general conditions, mainly due to crisp tissue, high water content of the mushroom, and easily induced by mechanical injury in the invasion of microorganisms, causing brown color, water loss, soft rot and rancid so seriously that affect their commercial value. Therefore, the experiment with mushrooms as the test material, analysis the influence of packaging materials, modified atmosphere packaging and high-oxygen modified atmosphere packaging combines with desiccant on storage and preservation of mushrooms, the content and results are as follows.1. The research of the influence of packaging materials on preservation of edible fungi. In this study, LDPE30μ, CPP30μ, CPP50μwere used to seal package, weight loss, respiration rate, browning rate, firmness, soluble solids of the Mushrooms during storage were measured, and the results showed that:preservation effect of three films were::CPP30μ>LDPE30μ>CPP50μ。2. The research of the influence of low-oxygen modified atmosphere packaging on preservation of mushrooms.The paper analysis the influence of different low-oxygen modified atmosphere packaging:1%、5%、10%、15%、20% on the quality of mushrooms;and in the condition of the optimal 5% O2 concentration,analysis the influence of different CO2 concentration:0%10%、20%、30%.What’s more,, adopting quadratic orthogonal rotating test for response analysis combined packaging headspace with the optimal 5% O2 concentration,20% CO2 concentration,the results showed that the optimal conditions for O2:4.15%, CO2:21.01%,0.67 headspace space under the condition of (4±1)℃RH96%.3. The research of the influence of high-oxygen modified atmosphere packaging on preservation of mushrooms.The paper analysis the influence of different high-oxygen modified atmosphere packaging:20%、40%、60%、80%、100% on the quality of mushrooms,the results showed that the optimal condition is 80% O2 concentration and 20% CO2 concentration.high oxygen modified atmosphere packaging can inhibit the metabolism of a variety of physiological activities to slow down the aging process at low temperature. Mushrooms maintain good quality in the store within 21 days.4. The research of the influence of high-oxygen modified atmosphere packaging with moisture absorbent of mushrooms. During the storage,high humidity inside the package leading to condensation of water vapor in the bag. follow-up study with hygroscopic agents show that soap and sorbitol in 3:1 maintained the best capacity of moisture absorption in the guarantee the agent is the state of powder. Then the mushrooms were packed with the "high oxygen + moisture agent"(5g/100g), this treatment can prolong the shelf life to 26 days of mushrooms and reduce nutrient loss.
