In our country the plant of euryale seed distribution mainly in lake, pond and beach, apart from now to have thousands of years of the cultural history.The purpose of this investigation was to evaluate protein properties of Semen Eruyale in SuZhou.In this work,the Semen Euryale protein isolate was prepared by isoelectric precipitation,and their physicochemical,functional,nutritional and structural properties were comprehensive studied.The purpose of this work was to provide some useful academic information and novel effective approach for deep processing of Semen Euryale, and developed some high value-added products for human consumption.1.The isoelectric point of the Semen Euryale protein isolate (SEPI)is5.8-6.53.2.The SDS-PAGE analysis indicated that SEPI has there subunits with molecular weights of56.9KDa,32.0KDa,23.0KDa.3.The DSC curve indicated that the denaturation temperature of SEPI is84.58℃.4.The amino acid analysis of Semen Eruyale protein isolates indicated that SEPI contained all essential amino acids.It was considered to be an excellent protein for54.4of the amino acid sore.5.CD and FTIR indicated that SEPI was a protein rich in β-sheet structure(~50%), the percentages of β-shand and random coil structures were almost equal(~20%). The percentages of a-helical was less.6.The least gelation concentration endpoint (LGE) was determined5%.Consideration the two factors of protein, concentration of protein and pH impact on gel formation.At the selected experiments, hardness,consistency and fracturability are seriously influenced by these two factors but cohesiveness and adhesiveness are not.7.The reports showed that SEPI solution presented thixotropy and pseudoplastic.Also it needed lower energy to damage the structure of the solution.The solution (60mg/mL pH8.0)was waterlike,with a viscosity below0.1Pa.s and the SEPI was typical non-Newtonian fluid and played shear-thinning behavior.Also determined the influence of standing time and the addition of sucrose to rheological behavior of Semen Euryale protein Isolates. When the SEPI solution placed longer, the apparent viscosity of the SEPI solution is raise. The apparent viscosity was obviously raised by the addition of sucrose, thereby the stability of the solution enhancement. The storage solution modulus (G’) significantly greater than loss modulus (G’’), showed that the SEPI solution has a weak gel properties.
