In order to make full use of straw resources and increase utilization way of the straw feed. This paper studied the effecting of pellet feed liquid addition under vacuum post spraying process group (experimental group), pellet feed liquid addition not under vacuum post spraying process group (control group1) and general pellet feed stuff group (control group2) to production performance, carcass quality, meat eating quality, nutritional ingredients, flavor composition, microstructure and ultrastructure, storage and processing characteristic of French IRA rabbit meat. The results of the study are as follows:1. Experimental group and control group2of average daily feed intake was significantly higher than control group1(P <0.05), no significant differencebetween experimental group and control group2(P>0.05); Experimental group average daily gain is significantly higher than control group1(P <0.05), but the experimental group and control group2, the control group2compared with control group1were no significant difference (P>0.05). The ratio of feed and weight were was not significant difference in three groups (P>0.05). Use pellet feed liquid addition under vacuum post spraying process feeding meat rabbit compared with ordinary granulated feed does not affect the meat rabbit average daily gain, average daily feed intake and the ratio of feed and weight.2. The carcass weight, dressing percentage, net meat heavy, bone weight, pure meat percentage, carcass meat-production rate, meat bone ratio, chest muscle weight, leg muscle weight, rate of chest muscle, rate of leg muscle and eye muscle area were no significant difference compared with control group1and control group2(P>0.05). Explain that pellet feed liquid addition under vacuum post spraying process does not affect the meat rabbit carcass quality compare d with ordinary granulated feed.3. The water loss rate, rate of cooked meat, and shear force were no significant difference in three groups (P>0.05). Use pellet feed liquid addition under vacuum post spraying process feeding rabbit will not decrease the water retention and tender degree of the rabbit meat. After using pellet feed liquid addition under vacuum post spraying process feeding rabbit has no influence to the color of rabbit meat, but has an impact on rabbit meat pH.4. In the experimental group compared with control group2, the nutritional ingredient content of rabbit meat moisture, ash, protein, fat, chlorine, total phosphorus, calcium, iron, zinc, VB1were not significant difference (P>0.05), the content of lactic acid, total sugar, reducing sugar and muscle glycogen difference was not significant difference (P>0.05); The content of fatty acid, cholesterol and iodine value was not significant difference (P>0.05). Use pellet feedliquid addition under vacuum post spraying process feeding rabbit has no effect on nutritional ingredient, lactic acid, total sugar, reducing sugar, muscle glycogen content, cholesterol, iodine value, fatty acid composition of rabbit meat.5. The content of aspartic acid, glutamic acid, alanine and valine, lysine, arginine and histidine in experimental group and control group2were significantly higher than that of control group1(P <0.05), no significant difference of other amino acids (P>0.05), showed the spraying liquid additives was significant affect to free amino acid content of rabbit meat flavor ingredients; Except cystine, the other amino acids in experimental group and control group2were have no significant difference (P>0.05). Except cystine, compared with ordinaryfeed the pellet feed liquid addition under vacuum post spraying process has noeffect on the content of water soluble amino acid to rabbit meat. The content of every nucleotides has no significant difference in the experimental group andcontrol group2(P>0.05), but the content of Hx,5’-IMP and5’-ADP were significant difference to control1group (P>0.05). Compared to control group2, the effect of pellet feed liquid addition under vacuum post spraying process to nucleotide content has no significant difference.6. The liver, kidneys, lungs and muscles structure in experimental group and control group2were better than the control group1, There was so little diff erence between in experimental group and control group2. The muscle fiber diameter, the length of sarcomere, A/I ratio of experimental group has no significant difference with control group2(P>0.05). The pellet feed in general the pellet feed liquid addition under vacuum post spraying process has no effection on microscopic structure and ultrastructure.7. Rabbit meat cryogenic storage period was21days, indoor temperature storage period was14days. By the sensory score, shear strength, pH and color detection of spiced rabbit meat, the storage properties, processing properties each index in three groups were not significant difference (P>0.05). Compared with pellet feed in general the pellet feed liquid addition under vacuum post spraying process has no effect to low temperature storage and processing properties of rabbit meat.The effect of pellet feed liquid addition under vacuum post spraying process to rabbit meat quality has no significant different to the quality of rabbit meat,the pellet feed liquid addition under vacuum post spraying process could replace with pellet feed in general.
