Starch Sodium Ocetnyl Succinaet(SSOS)is a new kind of additive for emulsifying andthickening. It is widely used with excellent performance. But as for its preparation, propertiesand application remains to be perfect.This paperworks on the preparation, properties andmolecular structure of Octenyl Succinic Anhydride Modified Potato Starch and the sampleafter enzymolysis with potato starch as raw materials. It focuses on the difference of SSOSwith high purity of amylase and amylose.The SSOS after enzymolysis is applied to be thewall material of microcapsule. It provides industrial production and application of SSOS withthe experimental data.Firstly, with the DS as the index, the effect of aqueous phasereaction’s parametersincluding concentration of starch slurry, temperature, pH of reaction system, time,anhydride/starch ratio, and times for diluting of OSA with alcohol are studied respectively. Bythe perpendicular experiments, the optimized conditions ofSSOS is that: anhydride/starchratio3%(dilutingfor5times), pH of reaction system8.0, reaction temperature35℃,concentration of starch slurry35%, time5h. And the DS of SSOS is0.01903. During theseparation of potato starch by dilute alkali method, purity of93.23%amylase and95.36%amylose is obtained. According to the optimal conditions, the DS of SSOS with highpurity of amylose is greater than the raw starch and SSOS with high purity of amylase.Secondly, with the DE as the index, SSOS is degraded by medium temperatureα–amylase. It founds that the digestion time, dosage of enzyme, type of acid, DS and contentof amylose has an impact on the enzymatic hydrolysis. The molecular structure of SSOS andthe samples after enzymolysisare analyzed by FT-IR, XRD, SEM. It proves that theesterification reaction exists in the non-crystalline region of the starch granules and theenzymatic hydrolysisdamages the both region to varying degrees.Physicochemical properties were tested respectively. The results are as follows: with theDS increased, the apparent viscosity of SSOS paste is increasing accordly and should beshear-shinning.The solubility and swellingrises while the transparency and coagulationreduces with the increasing of DS. As for the SSOS with high purity of amylase, its apparent viscosity, solubility and swelling is greater than the raw starch and SSOS with high purity ofamylase, but the transparency and coagulation is weaker. The SSOS after enzymolysisbelongs to Pseudoplastic Liquid. However, its apparent viscosity much less than SSOS. Thetransparency and solubility rises more and the swelling reduces more with the greater DEvalue. Compared with the SSOS, the SSOS after enzymolysis is much easier to coagulate.Finally, the relationship between embedding rate of microcapsule and the DS and DE ofthe SSOS after enzymolysis is researched. The higher DS do the samples have, the higherembedding rate do the microcapsules obtain. Asthe rising of the DE, the embedding rate risesat the beginning and reduces while it reaches22.
