Study on the pigment extraction process conditions in Tangerine peel in this paper,choose the ethanol solution for extraction solution. We investigated the ethanol concentration,olid-liquid ratio extraction time and extraction temperature on the influence of pigmentextraction efficiency. And determine the optimum reaction conditions by the orthogonalexperiment design: Ethanol concentration was60%, the material liquid ratio of1g:20mL,leaching temperature50℃, leaching time0.5h, the material liquid ratio as the maininfluencing factors. Under the optimized conditions of amplification experiments, themaximum withdrawal rate is44.4%. The experiment melting point and IR analysis test of theextract pigment product: Melting process range from122to126℃, illustrates the producthigh purity; by infrared analysis results showed that orange peel extract pigment includedconjugated double bonds, is aliphatic compounds.This article also examines the Tangerine peel pigment extraction by physical andchemical properties, provides the theoretical foundation for its practical application. Orangepeel pigment solubility test showed that in the first place, extraction of pigment belongs towater-soluble pigment, soluble in polar solvents. It in wavelength under the irradiation ofultraviolet light area, maximum absorption wavelength is330nm. To extract pigment of lightstability and thermal stability test research, the results showed that orange peel pigment hasgood light stability, within the scope of30~60℃has good thermal stability. Finally inspectedthe pigment in acid, alkaline, oxidation reduction environment and under the condition of themetal ions exist. Experimental results show that the pigment in weak acid, weak alkaliconditions, the presence of Na+reductant and metal, can be stable. Application and storageshould be avoided in strong acid, strong alkali, oxidant, metal Cu2+, Mn2+and Fe3+materialexistence environment.
