The traditional sterilization methods need to place packaging food in long-term temperature steam or hot water, lead to the degradation and destruction of nutrients. The microwave sterilization technology as a new sterilization technique, because of the short heating time, strong bactericidal capacity, fewer destruction of nutrients and flavor, no residual bactericidal agents, etc, has been rapid development and wide application.The fundamental purpose of Wet-type Microwave Sterilization is to improve the sterilization process heating rate and the internal temperature distribution uniformity of seafood. The heating rate and the uniformity of Seafood in microwave resonant cavity depend largely on the geometry of the food itself, physical characteristics, location in the cavity and the distribution of electromagnetic field in the cavity, The development of Wet-type Microwave Sterilization is done in the preliminary work. In this paper, used the food sample to conduct an experiment with the experimental equipment, refine and improve the equipment on the basis of experiments.The paper first introduces the compositions and structures of the equipment and by using the experimental equipment we conducted the test experiment of food sterilization. Though analyzing the variation and distribution of several sets of test samples, the feasibility of microwave sterilization is validated. Also, the deficiency of the equipment of microwave sterilization was found in the experiment. To further improve the uniformity of heating food, paper proposes redesign the circulation system and resonator, re-enacts the sterilization process on the basis of experiment.In order to achieve the promotion and application in food processing industry of wet microwave sterilization processing industry, proposed sterilization pilot line design, and research and design the resonator. On the basis of microwave heating, finite element model of temperature field and electromagnetic field are established to analyze the temperature distribution in the single-model cavity and food, through experiments and finite element simulation method reach conclusion the optimized waveguide horn size and arrangement. This paper presents setting multiple sets of different sizes, thus changing the distribution of of the electromagnetic between the microwave feeder port in the cavity, heating the food in a variety environment of electromagnetic.
