Zein is a good material to form film, but the characteristics of films composed by zein were not stable. Proteins arranged disorderly during the process of film formation cause this consequence. In order to suit specific applications, some means can used in the process of film formation to control the arrangement of zein proteins. For example, we can regulate the spatial structure of monomeric protein aggregation to form hydrophilic/hydrophobic gel. It has great significance in the theory research of zein.A electrical field has applied in the process of film formation and drying process respectively. The charged particles in the zein solution were moved by the effect of the electrical field. The microstructure of zein films was altered, for the reason that the characteristics of zein films were improved. Experiment had certificated that it was feasible to use electrophoretic deposition in the preparation of zein films. The present work studied the effect the concentration of zein, the concentration of ethanol solution and the pH of zein solution on the quantity of charged particles in the zein solution. Zein films can take shape only in the situation that concentration of zein was above0.09g/mL(zein/ethanol solution). AFM indicated that zein gathered closer in the85%ethanol solution, thus the structure of zein films formed by85%ethanol solution was more stable.We put two shape of electrical filed in the drying process. The surface morphology and characteristics of zein films drying naturally and electrically were compared. Electrically treated films showed no obvious difference with the films drying naturally on the surface morphology. However the mechanical properties, water resistance and water vapor transmission of films drying electrically exhibited higher performance than those drying naturally. SEM indicated that microstructure improved the higher characteristics mentioned above. The best characteristics of zein films drying in the electrical field settled parallelly and vertically were formed in90%ethanol solution and100V (TS73.09MPa, EB9.68%, RWA14.15%, WVP2.54×10-8g·m/(m2·h·Pa)for parallelly settled electrical field and TS68.75MPa, EB8.22%, RWA20.95%, WVP3.84×10-8g·m/(m2·h·Pa) for vertically settled electrical field).
