Food safety issues have become the widespread concern of focus of countries inthe world. Though the governments have already formulated strict standards for foodtesting, However, food safety issues are still quite severe, especially in ediblevegetable oil (mixed with inferior oil) aspect. Currently,the testing techniques foredible vegetable oil quality are varied, most of them are based on the laboratoryinstruments, which are complex, costly and independent and so on, they only studythe particular physical and chemical indicator of vegetable oil, we cannot get a fastfilter and comprehensive measurement for the quality of edible oil. This paper studiestesting technology of optical and electrical properties of vegetable oil,which mergesthe electrochemical measuring and testing technology and optical detection techniquein order to explore a new technology method of edible oil.The main contents of this research:1、Researching the three-electrode sensor detection system of the electricalparameter of vegetable oil,I analyze and construct a three-electrode electrochemicalsignal acquisition unit. the paper regards the analog front-end devices LMP91000asthe signal conditioning circuit,which can achieve the constant control of electrodepotential, the gain of amplification and so on. In the role of cyclic voltammetryexcitation signal, we can detect and analysis the electrical parameters of ediblevegetable oil.2、Researching the optical sensor detection system,this paper uses the deuterium-halogen light as the excitation source and uses the high-speed linear CCD sensor asdetector,it researches the detection technique of wavelength range of the UV spectraland the visible signal,which Mainly detects the double reflected light intensity signalof the two sources. And through t the first derivative of the original spectrum to findout the different optical characteristics parameters of the sample, in order to analyzethe characteristics of the edible oils.3、Application of oil optical-electrical detection system of edible vegetable. Ituses this system to detect different characteristics of edible vegetable oil (mixed withinferior oil) for preliminary experiments,which can detect the optical-electricalparameters of vegetable oil and adulterated vegetable oil. The analysis found,under the same external environment,the zero number of the first-order differential isdifferent between qualified vegetable oil and adulterated oil, meanwhile, with theincreasing proportion of the low-grade oil, the reflected light intensity and the cyclicvoltammetry response will change, and they meet positive correlation.The testing technology of optical-electrical properties of vegetable oil and thedata analysis method of this paper can provide a reference for low-cost, rapidscreening test for further research techniques of edible oil.
