Study On The Liquor Fermentation Process Of Low Quality Citrus

Using low quality citrus as raw material, a new co-production process that could obtain liquor and citrus powder was designed under the techenolegy of enzyme treatment and fermentation.Recycling juice through enzyme treat citrus mar was researched. The best enzymic treatment condition which was optimized by the single factor experiment and orthogonal experiment was55℃in tempterture,0.06%of pectinase and2.5hours. Under enzymic treatment, juice yield of citrus improved from50%to59.2%.The conditions of this process were optimized. In this fermentation, the active dry yeast was used which could produce more aocohol and was used simply. The fusel has been reduced33.7%by removing residue from orange juice. Adding sulfur dioxide with asteurization was the best method for sterilization. The sugar degree was adjusted to15-18BX by adding glucose. Under this sugar degree, the maximum biomass was achieved and the reducing sugar was less. The optimized condition of fermentation was that temperature30℃, pH nature, the amount of inoculation5%. Lowering the temperature to deal with orange juice, adding potassium metabisulfite and reducing the fermentation time could decrease the loss of vitamin C.In this paper, yeast autolysis and enzymic debittering were studied. The amount of amino acid was improved21.2%and the rate of naringinase debittering was61.75%. Simultaneous autolysis and debettering could simplify the process. Condition of distillation was optimized by twice distillation.The alcohol degree and the alcohol recovery rate of the first30%of total obtaibned by the rough distillate was24.9%and96.6%respectively. Rectification which distilled the rough distillate must take out the3%at the top and then the best of distilled solution would be obtained during the next23%. Citrus powder obtained by drying need to add30%-60%of soluble starch or50%-60%of microcrystalline cellulose.Finally, this co-production process by amplification experiment using10T fermentor achieved a desired effect. A processing10000t low quality citrus company could yield10.8million as profilt and20.5million as tax through cost accounting.
