Acrylamide (AM) is a neurotoxin, genetic toxin and carcinogen. It is usually found infried foods, especially in fired potato chips which contain a large quantity of AM, causing athreat to human health. Chromatography techniques are mainly used for the detection ofacrylamide. They have the advantages of accuracy and high sensitivity, but they needprofessional skill, expensive equipment and laborious pretreatment process. Thereforechromatography could not achieve rapid detection. Electrochemical detection of acrylamide isa method of simple operation, fast response, high sensitivity and even achieving the scenedetection. Now electrochemical detection is widely used in detection analysis. PtNPs andMWCNTs material have many advantages, such as large specific surface area, good electricalconductivity and biological compatibility. Based on the electrochemical properties of PtNPsand MWCNTs as well as the reaction of AM with Hb and GSH, the electrochemical researchcontents were follows:1. Research on electrode materials: MWCNTs, Carboxyl MWCNTs, CarboxylMWCNTs–RTIL and Carboxyl MWCNTs-DMF were used to modified GCE. Based oncarbon nanotubes modified GCE, the response of Hb was researched as well as GSH whichbased on PtNPs modified GCE. MWCNTs/GCE, carboxyl MWCNTs/GCE, carboxylMWCNTs RTIL/GCE and PtNPs/GCE was selected out. The optimum concentration ofMWCNTs and carboxyl MWCNTs was0.5mg/mL, the optimum scale of RTIL and CarboxylMWCNTs was2:9. For PtNPs/GCE, the optimum electrodeposition time was240s.2. Research on detecting condition: the result showed that the optimum condition was pH7.4and the scale of Hb and electronic media was1:100. After further study, the result showedthat Carboxyl MWCNTs RTIL/GCE caused more influence on GSH.3. Detection of acrylamide: for Carboxyl MWCNTs-RTIL/GCE, according to conjugationreaction between GSH and AM, the linear equation was△iap=2.85×10-3cAM+14.3327,correlation coefficient R=0.9981, detectable range was from10to600μM, detectable timewas10s and adding standard recovery rate was92.93%. For PtNPs/GCE, according toconjugation reaction between Hb and AM, the linear equation was△iap=0.06671cAM+0.12185, correlation coefficient R=0.9994, detectable range was from20to200μM, detectable timewas25min and adding standard recovery rate was96.53%;...
