Getting the green safety gardenia yellow pigment with high added value is the focus of current research. In this paper, we take the aim at simplifying the process, improving quality of the product and reducing the costs and the residual organic solvents. Enrich and purify the yellow pigment from gardenia by macroporous resin adsorption technology and research on the characteristics of the gardenia yellow pigment. The main results in this paper include the following aspects:1. Optimization of process parameters for yellow pigment extraction considering the actual situation of production. Finally select the fruit of Gardenia jasminoides var. radicans Makino filled with numerous yellow pigment, extracted three times under each solid-liquid ratio of1:16,1:10,1:10(g· mL-1) and each time of8h,6h,5h respectively at room temperature with water after pulverized to about40mesh.2. Make the filter natural subside after the solution separated from solid-liquid mixture by two layers of gauze or others with the same pore.3. The HPD100A macroporous resin was chosen to purify the pigment for its strong adsorption and desorption abilities as well as high selectivity by the static adsorption and desorption experiments. The three kinds of crude solution which pass the resin column at the flow rate of10BV·h-1,30BV·h-1,60BV·h-1(BV represents column volumes) after filtration respectively according to the relationship between the flow rate of solution and the degree adsorbed of pigment. the resins were washed with water after they could not absorb too much the yellow pigment, and then desorbed with ethanol-water(90:10, v·v-1) solution at the speed of0.5BV·h-1and collect the yellow pigment solution, which was dried after concentrated. The product after purified show a good appearance quality, its colority was raised from34.6±0.5to384.3±4.3, its OD ratio was decreased from0.34±0.04to2.2±0.3, and its geniposide content was gone down from14.20%to1.19%, or the content was4.10%before purified and0.03%after purified by resin if the colority was10, the content of chlorogenic acid decreased and the yellow pigment enriched and purified.3. PH value has no effect on the tone and has a small impact on the UV-visible absorption spectrum of gardenia yellow pigment. The product should be stored where have no light and keep a low temperature to get less damage. Acidic environment will accelerate the degradation of yellow pigment, and the faster, the higher of the hydrogen ion concentration, while the alkaline environment can delay the process. The product has good sugar and salt tolerance, but show poor oxidation resistance and resistance to reductive. The pigment solution should be used as soon as possible because it will fade slowly in aqueous solution.
