With the development of economy, people's income has increased steadily. More and more consumers demand for diverse and high quality products. Green food has been developed rapidly because of its'safety, high-quality, pollution-free and satisfies the demands of consumers.The rapid development of green food asks for higher requirements of green food management, however the current management of green food has many problems:Firstly, the management system can not meet the rapid development of green food. Secondly, it just focuses on the green food authentication, but neglects green food regulation, thus resulting in green market confusion, finally affects the development of green food industry. So we should reform the system, strengthen the regulation of green food.In order to promote the development of green food industry, we must strengthen the green food management. What's more, we should focus on analyzing consumers' behavior. This paper uses utility theory to explain why the green market is still undeveloped, uses lemon market theory to analyze how asymmetric information leads to the shrinking of green food market, and obtains some useful results.Based on the economic analysis and one hundred and fifty-five questionnaires written by Wuhan consumers, this paper describes the consumers'awareness of green food and green egg purchase. Finally, an econometric model is used to analyze what factors is affecting Wuhan consumers' awareness of green eggs and green eggs purchase. The result shows that:consumers'age, education and income is significant to the green food awareness. Income, green food awareness and whether the consumers often buy green eggs or not is significant on the purchase of eggs.
