The components with regard to fat, protein, carbohydrate are abundant in pork which is traditional consumed meat deeply favored by Chinese people. Nowadays with focus on food safety, pursuing health and desiring natural and green food by consumers become increasingly strong. As report pointed out, more tender texture, better taste and more nutrition are exhibited by comparing organic pork to conventional one. Although there are numerous organic pork products of a variety of brands in the markets, fake and poor quality products appear occasionally. Agro-products authenticity traceability are implemented by employing specific identity information from abroad, like identif ication traceability technology of fatty acid factor, fingerprint pattern technology related to NMR and IR, nevertheless, which are blank in our country. There is a lack of technology of authenticity identif ication and quality safety traceability on organic pork in our country couple with supporting weakly techniques, primary method for organic pork authenticity identif ication involve in relying on attach tag to pig ear, which still gives no validation upon pork product authenticity when product does not correspond to its tag. As a consequence, for purpose of maintaining fair competition in the market and safeguarding the legitimate rights of customers we need should carry out research on authenticity traceability of organic pork. The paper will introduce determination fatty acids and polar metabolites in tenderloin and backfat from organic and conventional pork by employing GC and NMR and eventually construct traceability model of organic pork based on fatty acid and polar metabolites related to 1H-NMRThe specific works are as follows:(1)The detection methods of fatty acid and polar metabolites in meat from home and abroad were reviewed. The research advance of analyzing fatty acid and polar metabolites in meat using GC and NMR had been known and aim and significance of the research were clear.(2)Study on constructing traceability model of organic pork by GC determining fatty acids in pork tenderloin: The exper iment included fatty acids determination, PCA on results, PCA figure by Origin, model construction and discriminant analysis to model after optimizing pretreatment method and test condition. Results showed of 21 fatty acids seven of most content(%) were, in order, C18:1-cis(n9), C16:0, C18:2-cis(n6), C18:0, C20:4(n6), C16:1, C14:0 and 15 fatty acids were found signif icantly different between organic and conventional pork tender loin. The cumulative contribution rate of extracted three principal component was 75.73%. In PCA figure organic and conventional pork were distinguished well. The rate of correct classification of first and cross discrimination to model were 100% and traceability model of organic pork was reliable.(3)Study on fatty acid exist in backfat of organic and conventional pig by NMR: Determining backfat fatty acids with optimal conditions and PROF1H standard experiment and variance analysis for results were carried out. The results showed that the content(%)of 4 kinds of were, in order, MUFA>SFA>n-6 PUFA>n-3 PUFA. And the content of n-6 fatty acids and MUFA were extremely signif icantly different(P<0.01) and signif icantly different(P<0.05) respectively between organic and conventional pork backfat.(4)Study on polar metabolites in organic and conventional pork tenderloin by NMR: Determining polar metabolites in pork with optimal conditions and PROF1H standard experiment was implemented. From two aspects of absolute content and relative content(%) of polar metabolites, PCA on results, PCA figure by Origin, model construction and discriminant analys is to model were carried out. Results showed that: Glycine of absolute content was found signif icantly different between organic and conventional pork tender loin(P <0.05). The cumulative contribution rate of extracted three principal component was 71.67%. In PCA figure organic and conventional pork were not distinguished well. The rate of correct classification of first and cross discrimination to model were greater than 80% and traceability model of organic pork was relatively reliable. Of polar metabolites(%) glycine was extremely signif icantly different(P<0.01), whereas methionine, valine and leucine were signif icantly different(P<0.05). The cumulative contribution rate of extracted three principal component was 76.74%. In PCA figure organic and conventional pork were not distinguished well. The rate of correct classification of first and cross discrimination to model were greater than 70% and traceability model of organic pork was relatively reliable.The above results showed constructed traceability model of organic pork by fatty acids by GC was reliable,while the model by polar metabolites by 1H-NMR was only relatively reliable.
