Functional Studies On Red Jujube Lactic Acid Drink

Red jujube is a peculiar fruit in our country, nearly 100% of the red jujube all over the world come from China, there are many jujube compound drinks using red jujube as raw material on the market at present, but red jujube lactic acid drink is rare, the functional study on red jujube lactic acid drink is also rare. The content of this research includes, HPLC for determination of organic acids and polyphenols in red jujube lactic acid drink, the antioxidant activity of it, and the hypolipidemic of it, the results are as follows:(1)In order to test organic acids, red jujube juice, bacteria liquid and red jujube lactic acid drink were evaluated by HPLC, the results showed that the red jujube juice mainly contains lactic acid, formic acid, malic acid and oxalic acid, the content of lactic acid and formic acid is higher; and the main organic acids of red jujube lactic acid are lactic acid, acetic acid, oxalic acid, tartaric acid, formic acid, malic acid and citric acid, the content of lactic acid is the highest; Lactobacillus bacteria liquid contains tartaric acid, lactic acid and acetic acid, the content of lactic acid and acetic acid is higher, the composition and content of organic acids in red jujube lactic acid drink are higher than red jujube juice and lactobacillus bacteria liquid.(2)Polyphenols of red jujube lactic acid drink were analyzed by HPLC, and the results showed that the red jujube juice, and red jujube lactic acid drink all contain gallic acid, protocatechuic acid, caffeic acid, p-Coumaric acid, rutin and quercetin.Except rutin. all the content of polyphenols detected in red jujube lactic acid are significantly higher than that of jujube juice.(3)Oxidation test results showed that red jujube lactic acid drink has certain antioxidant effect, its total antioxidant capacity is 97.21, Vc equivalent concentration of removing DPPH· free radicals is 23.68mg/100 m L, Vc equivalent concentration of removing ABTS+ free radicals is 45.21mg/100 m L, Vc equivalent concentration of Fe3+ reduction ability is 99.75 mg/100 m L.Comparison experiment includes red jujube juice, jujube vinegar, red jujube wine, red jujube wolfberry drink, wild jujube juice and jujube cheese,it showed the total antioxidant capacity of red jujube lactic acid drink is the strongest. The antioxidant capacity and total polyphenols content of jujube drinks has extremely significant correlation(p<0.01).(4) Animals(mice) test results showed that red jujube lactic acid drink can make TCH, TG, LDL-C and fat coefficient decrease obviously, make arteriosclerosis index fall, and restrain the growing of weight,it can also protect the liver of mice. Red jujube juice and lactobacillus bacteria liquid also have hypolipidemic effect, they have certain inhibitory effect on the increasing of body weight, but not as good as red jujube lactic acid drink. Red jujube lactic acid drink not only has the compositions of red jujube, such as polyphenols,but also has organic acids and polyphenols fermented by lactobacillus bacteria liquid, this may be one of the reasons why the hypolipidemic effect of red jujube lactic acid drink is better than red jujube juice and lactobacillus bacteria liquid.
