Color as an important sensory quality of red Wine, has been no very specific research also did not reach a consensus, which leads to the lack of corresponding industry standards on the market. It’s necessary to carry out research on the color of the wine-producing areas.Since the wine region in Eastern Foot of Helan Mountain as the world’s emerging regions and domestic pillar areas must carry out research on this area and it’s great impact on the healthy development of this industry.Quantitative analysis is necessary preconditions to investigate classification and grading for various color quality, the quantitative determination the and comparative analysis of wine color has become an important issue. Liang Dongmei, Li Jiming, et al. Using spectrophotometric method for the determination of 420nm,520nm,620nm wavelength light absorption value to determine the Wine color in a few years ago, this method is widely used in domestic.Perez-Caballero V,Ayala F, et al. Using CIE1976Lab(recommended by International Commission on illumination color system) method of quantitative analysis of red wine color, but the method is not popular in the domestic application. And the red wine color almost covers all the different red,the judgment differ in thousands of ways, the current the research of wine color classification is vacant.Based on this, the paper made a comparative analysis on two wine color determination method,and ultimately choose the CIE1976Lab uniform color space (recommended by International Commission on illumination color system). Using UV2450 spectrophotometer,and UV visible spectrophotometric method for the determination of Wine color light absorption value calculation of CIEL*a*b* parameters.Quantitative appraisal of color of red wine is established according to the parameters of hue (H*),Chroma(C*) and Lightness(L*)are analyzed in CIEL*a*b*.The experiment under the standard D65 light source,and the hue is divided into 5 levels, the chroma is divided into 6 levels, the lightness is divided into 10 levels. Construct the are:RzCx(0-5+)LX(5--5+)、RyCx(0-5+)Lx(5--5+)、 RbCX(0~5+)Lx(5-~5+)、RmCX(0~5+)LX(5--5+)、RzhC(0~5+)LX(5-~5+),A total of 300 type.Using Microsoft Visual C++6.0 software programmable digital model. Organoleptic results obtained the CIEL*a*b* method highly fit to the human eye observations and can scientific identified wine color. CIEL*a*b* parametersd and CIEL*a*b*level model,both based on the method of instrumental analysis,could make successful color data.
