Jinhua ham originate in the region of Jinhua in Zhejiang Province, dating back to more than 1000 years,which is a famous traditional meat products, because the meat is tender, fat but not greasy, unique flavor, which is well known all over the world the stand or fall of the quality of Jinhua ham can be used to indicate the antioxidant index, but the study of this traditional food antioxidant function is less in the our country, strengthenning the analysis of Jinhua Ham antioxidant capacity for protection, exploitation and utilization of the national brand has a very important significance. This paper consider The Jinhua Ham as raw material,uising the way of ultrafiltration and gel chromatography extraction, separation and purification, we made a very through analysis on the chemical evaluation system and the cell system extracts antioxidant, the results are as follows:(1) Using the ether to remove its’ fat-soluble subtances and boiled the water-soluber extract,then using Sephadex G15 to isolated and purified the water-soluble extract in order to get four different molecular weight peak. Using different methods to determine in vitro antioxidant activity, the results indicate that the antioxidant activity is different of the different molecular weight.(2) We establish a MGC-803 cell model, the experement show that the crude extract and four peaks to MGC-803 cells is without potential toxicity. To establish the oxidative damage model, the crude extract and four peaks have damage effect on MGC-803 cells. The determination of enzyme activity showed that the extract has antioxidant function of ham cells, which can improve the activity of intracellular antioxidant enzymes, inhibit lipid peroxidation, and reduce free radical damage to cells.(3) Treating the Caco-2 cells as a model, quercetin, ham extracted from buckwheat peptide and peptide not only has no-potential toxicity to Caco-2 cells but also has a protective effect on the oxidative damage of cells.
