This paper introduces the project background, high pressure homogenization principle and its status. Then explains the feasibility of preparing small molecules animal collagen by high-pressure homogenization technology. The high-pressure homogenization principle and its impacts on the emulsion have been introduced particularly. The paper also discusses the domestic and foreign development of high-pressure homogenization technology and points out the urgent issues and theoretical research vacancies in its field.Introduce the fractal theory and explains its application in the actual process of crushing. Establishe the theoretical model of particle’s specific surface area by fractal dimension of particle surface, and research the relationship between article size distribution and specific surface area. Model and simulate for traditional high pressure homogenization process by FLUENT software, then deduct the simulational expression of material internal energy changing quantity by static pressure and velocity of basin entrance and exit.Correct the traditional crush energy consumption theory, then establishe the relationship between energy and specific surface area.The experimental study have been carried out for high pressure homogenization,and analyzes the experimental results from several different points of view. By comparing the experimental data and the theoretical analysis, verify the relationship between the specific surface area and the model of particle frequency distribution.Simulate by FLUENT software, substitute the experiment data into theoretical model and find the simulational data of material internal energy changing quantity.Establishe the relationship between energy and specific surface area by analysis experiment data. Find the deviation between experimental data and the theoretical model and propose the improvement plan of theoretical model. The experimental results were analyzed qualitatively, mainly analyzes the underlying factors of product size frequency distribution multi-peak curves and the protein denaturation situation after effect of high pressure homogenization.
