Fermentative production of pyruvic acid by Debaryomyces hansii var. hansenii was investigated in this paper. A mutant was obtained after DES and UV treatment. By using orthogonal experiment method, the concentration of pyruvic acid reached 5.2g/L at 30â„ƒ,200r/min,72h in flask culture.
